Ingredients

  • 2 lbs carrots
  • 1 tsp cinnamon
  • cup coconut sugar or brown sugar
  • 1 tsp vanilla extract
  • ¼ cup olive oil or neutral oil
  • dash salt

Instructions

  • Gather your ingredients and preheat your oven to 375°F.
  • Wash, peel and chop your carrots.
  • Add carrots to a bowl with oil, sugar, vanilla, cinnamon and salt.
  • Mix thoroughly to coat.
  • Add to baking dish and bake for 20-25 minutes or until soft.
