- 2 lbs carrots
- 1 tsp cinnamon
- ⅓ cup coconut sugar or brown sugar
- 1 tsp vanilla extract
- ¼ cup olive oil or neutral oil
- dash salt
Gather your ingredients and preheat your oven to 375°F.
Wash, peel and chop your carrots.
Add carrots to a bowl with oil, sugar, vanilla, cinnamon and salt.
