    Vegan Brown Sugar Glazed Carrots add a pop of color to a holiday table. They're the side everyone reaches for! I'm obsessed with making these sugared carrots; they're the kind of easy, 10 minute to prep side dish that fits just as perfectly for me at a weekday dinner as it does on a Thanksgiving table.

    I love that they only have 4 ingredients and are also plant based, dairy free and allergy-friendly! I love coming up with ways to turn simple vegetables, like the humble carrot, into something special: sweet, caramelized and toffee-like. It's quick to throw together, totally kid-friendly and the perfect touch of cozy sweetness for any holiday or everyday meal.     These vegan brown sugar glazed carrots make the most beautiful, colorful side.

    They are naturally vegan and made with simple, wholesome ingredients. With a little sweet treat twist.

    I love that their caramelized sweetness makes it taste like a treat, even though it's a veggie side.

    I find that it's quick and easy. I just toss, bake and they are ready to go!

    I'm obsessed with the cozy, cinnamon and vanilla aroma that fills my kitchen while these sweet carrots are roasting.

    They pair perfectly with all my savory mains and holiday dishes.

    I really like their tender texture and crisp edges. This is my favorite way to make carrots.

    Ingredients Needed

    Carrots: Any color works. Your carrots should be firm and super fresh. You could also use purple carrots to make these vegan brown sugar glazed carrots.

    Cinnamon: I add cinnamon for a warm, wintery feels. You can also use a little nutmeg.

    Sugar: You can use any sugar, but I love using coconut sugar for a deep, caramel like sweetness.

    Vanilla: Adding vanilla makes this recipe a little special. It's optional, but I love it.

    Olive oil: I use olive oil to help the carrots roast to glossy perfection.

    Step By Step Instructions

    Step 1: Preheat your oven to 375°F and gather all your ingredients together.

    Step 2: Wash, peel and chop the carrots.

    Step 3: In a bowl, combine the carrots with oil, sugar, vanilla, cinnamon and salt, then toss well to coat evenly.

    Step 4: Transfer the vegan brown sugar glazed carrots to a baking dish and bake for 20-25 minutes or until tender.

    Storage

    I store my leftover sugared carrots in an airtight container in the fridge for up to 4 days. I then reheat them in the oven or a skillet to bring back their caramelized texture and flavor.

    I don't recommend freezing these vegan brown sugar glazed carrots.

    Variations

    Sometimes I'll swap the sugar for maple syrup in these vegan brown sugar glazed carrots.

    If you like orange flavor with carrot, add a little fresh orange juice and zest.

    I love the addition of smoked paprika or cumin.

    You can also fold through fresh herbs like thyme or parsley. I like to do these as soon as they come out of the oven.

    Can I use a different sweetener?

    Yes! You can use maple syrup, agave or even date syrup instead of coconut or brown sugar. Some of the liquid sweeteners may make the carrots slightly softer, so keep an eye on them.

    Can I use baby carrots in this vegan brown sugar glazed carrots recipe?

    Absolutely. I'll sometimes use baby carrots and they come out delicious. I try to keep them the same size so that they cook evenly and don't have spots that are underdone.
