    Gluten Free Chocolate Mint Cookies

    These Gluten Free Chocolate Mint Cookies are the perfect holiday cookies to add to your baking list! They are quick and easy to make. They are also soft, chocolatey and have the perfect peppermint flavor. Plus, they're gluten-free, vegan and refined sugar free. Serve them at your next holiday party, cookie exchange, Christmas Eve or leave them with a glass of milk for Santa Claus. I love how festive they are!

    I love making cookie boxes during Christmastime. There is something so fun and nostalgic about baking cookies and looking out the window to a snowstorm. These cookies are kid-friendly and you can also get your kids involved in the process!

    This recipe is super kid-friendly.

    The combination of decadent chocolate and minty peppermint is so fun!

    Ingredients Needed

    Almond Flour: The base of these cookies is made with almond flour, which is naturally gluten free. I have only tested this recipe using almond flour, so I would not recommend substituting a different type of flour in this recipe. I love using Bob's Red Mill Almond Flour or Terrasoul Almond Flour. I try to opt for organic whenever I can, but it is definitely pricier, so I just do my best!

    Baking Soda: Baking soda helps to make these cookies soft and chewy.

    Cacao Powder: Cacao powder gives these cookies a rich chocolatey flavor. I try to use organic ingredients whenever possible. This is my favorite brand of cacao powder.

    Salt: Salt enhances the flavor of these cookies and balances the sweetness of the other ingredients.

    Almond Milk: I used dairy free milk in this recipe because I am dairy free, but feel free to also use regular milk if you are not dairy free!

    Sweetener: Choose honey or maple syrup for a natural sweetener option in these cookies!

    Oil: I like to use a neutral oil, such as avocado oil, in these cookies. You can also use olive oil or any other type of oil you have on hand.

    Vanilla extract: Vanilla adds a delicious warming flavor to these cookies!

    Chocolate: Melted chocolate on top makes these cookies so decadent. If you need dairy free options, I love using the Hu Kitchen or Enjoy Life Foods brands. You can also use regular milk chocolate chips if you are able to have milk!

    Candy Canes: I love using YumEarth candy canes because they are made with better-for-you ingredients and no artificial dyes. They honestly taste exactly the same too!

    These Gluten Free Chocolate Mint Cookies can be served several ways:

    Pair them with a glass of milk (dairy free if needed)!

    Equipment

    • 1 baking sheet
    • 1 mixing bowl
    • measuring cups and spoons
    • 1 mixing spoon

    Ingredients

    • 2 cups almond flour
    • 1 tsp baking soda
    • 2 tsp cacao powder
    • dash salt
    • 2 tbsp almond milk
    • 3 tbsp honey or maple syrup
    • 1/4 cup neutral oil
    • 1 tsp vanilla

    For the top:

    • 1/4 cup dark chocolate
    • 2 candy canes
    Get Recipe Ingredients

    Instructions

    • Preheat oven to 350° F and gather your ingredients.
    • Combine all ingredients in a bowl.
    • Refrigerate the batter for 15 minutes.
    • Form into cookies, press flat and use your thumb to create the thumbprint in the middle.
    • Place on baking sheet and bake for 10 minutes.
    • Once cooled, fill the middle of each cookie with melted chocolate and sprinkle with crushed peppermint. Enjoy!
