Why You’ll Love This Gluten-Free and Dairy-Free Mini S’mores Skillet

    It’s gluten-free, dairy-free and allergy-friendly!

    It’s kid-friendly!

It’s quick and easy to make.

It is the perfect comfort food or party dessert!

    Equipment Needed

All you need for this recipe is a mixing bowl and a mini skillet. I use this mini skillet by Lodge. It is very cost-effective and is also non-toxic!

Ingredients Needed for This Decadent Mini S’mores Cookie Skillet

Otto’s Naturals Cookie Mix: I LOVE this cookie mix because it is naturally gluten-free. Feel free to swap for a different one if you would like! If you use my code LESSWITHLAUR you can get a discount on their website.

Plant-Based Butter: My favorite dairy-free butter is Miyoko’s Creamery. I find it works the best for baking.

Flax Egg: This is what helps bind the recipe together. If you are able to have eggs, you can definitely swap in an egg instead.

Vanilla: Vanilla extract always elevates any cookie recipe. If you have histamine issues, try using a non-alcoholic vanilla extract.

Dairy-Free Chocolate Chips: My favorite brand for this is Enjoy Life Foods. I use the white and dark chocolate chips!

Ice Cream (for topping): I LOVE Nadamoo Vanilla for this. It is coconut-based.

How to Make This Easy Mini S’mores Cookie Skillet

Preheat oven to 350ºF. Combine all the ingredients in a mixing bowl. Grease your mini skillet (I like to use avocado oil or coconut oil). Pour batter into greased mini skillet. Top with extra chocolate chips and marshmallows! Bake for 15-20 minutes. Top with dairy-free ice cream and enjoy!

    Substitutions and Variations

I have not tried this with another cookie mix, but you definitely can! Let me know how it goes! If you need the recipe to be nut-free, make sure your butter does not contain nuts.

    Storage

Store this cookie skillet in the fridge for up to 5 days. You can also freeze it. I doubt you will have leftovers though!

    Recipe FAQ

Can you make this recipe nut-free?

Yes! Make sure all of the ingredients you are adding are nut-free such as your butter, marshmallows, chocolate and cookie mix.

Do you need a skillet to make this recipe?

I had someone tell me the other day that they used a pie pan and it worked well! I have not tried it myself though.
