All you need for this recipe is a mixing bowl and a 8×8 baking dish.
Ingredients Needed for These Gluten-Free Birthday Cookie Bars
Paleo Flour: My favorite is Bob’s Red Mill brand and this is the brand I used! I like to get my gluten-free flour staples from Thrive Market because they have great deals! If you use my link, you can get 40% off your first order.
Coconut Sugar: This is my favorite refined sugar-free option!
Honey: I love the flavor of honey in my baked goods, but if you do not eat honey you can substitute with maple syrup.
Plant Milk: Any plant milk would work here!
Olive Oil: I love to bake with olive oil, but you can also swap with avocado oil or coconut oil here.
Vanilla: I love to buy my vanilla extract in bulk from Thrive Market (see above for 40% off your first box). If you have histamine issues, getting a non-alcoholic vanilla extract may be helpful for you!
Baking Soda: Make sure your baking soda is labeled gluten-free!

Vanilla Frosting: I am so sad because Simple Mills discontinued my favorite frosting, so I have been using Miss Jones or homemade vanilla frosting for this.
Sprinkles: I always make sure to look for naturally dyed sprinkles!
How to Make These Gluten-Free and Vegan Birthday Cookie Bars
Preheat your oven to 350º F. Grease an 8×8 baking dish. Combine dry ingredients in a bowl and stir in wet ingredients. Pour batter into baking dish and bake for 15 minutes or until slightly browned. Let cool and then top with frosting and sprinkles!

I have not tried these with any other types of flour. Please let me know if you do!
Storage
Store these gluten-free birthday cookie bars for up to 5 days in an airtight container (I prefer to store these in the fridge). You can also freeze them if you prefer!
