Ingredients Needed to Make This Blueberry Hazelnut Chicken Salad
Shredded Chicken: My hack for this is using a rotisserie chicken to make this a quick meal prep! You can also cook and shred your own chicken breast if you prefer.
Blueberries: I recommend only using fresh blueberries for this!
Hazelnuts: Roasted hazelnuts give this recipe a really nice touch! You can purchase roasted hazelnuts, but I prefer to roast them myself for 10 minutes at 400º F with garlic powder, salt and avocado oil.
Celery: The celery gives this recipe some extra crunch.
Mayonnaise: I recommend using a mayonnaise with good ingredients such as Primal Kitchen (if you use code LESSWITHLAUR you get a discount). I also like to purchase items like this from Thrive Market because they tend to be cheaper. If you order from my link, you get 40% off your first order! This membership is a lifesaver if you are gluten-free and/or dairy-free!
Garlic: Feel free to use fresh garlic here or garlic powder if that’s what you have on hand.
Salt: My favorite salt is Redmond Real Salt and LESSWITHLAUR gets you 15% off your order.

You can use a rotisserie chicken to save time or you can cook the chicken yourself and shred it. Sometimes hazelnuts can be difficult to find, so they can definitely be swapped with another nut if necessary!

Low Histamine Notes
If you need to follow a low histamine diet, this section is for you. Please note that everyone will have varying tolerances for histamine and this is up to you and your medical providers to determine. To make the chicken low histamine-friendly, purchase frozen chicken, cook and consume this chicken salad the same day you make it. A good swap for mayonnaise in this recipe is coconut cream. You can also make your own low histamine mayonnaise at home. Blueberries and hazelnuts are lower histamine, so they are a great flavor combination for a lower histamine chicken salad!
