    This One Pot Chicken Pot Pie Gnocchi is a perfect cross between a chicken pot pie and chicken and dumplings. This recipe is made with pillowy gnocchi, nourishing veggies and juicy chicken. It's cozy, comforting, nostalgic and the best part is that it comes together in under 30 minutes.

    I am OBSESSED with all things gnocchi. I eat gnocchi at least once per week and I am always finding new ways to experiment with it. This is one of my favorite recipes yet!     This One Pot Chicken Pot Pie Gnocchi is the perfect comfort food that the whole family will love. It's creamy, hearty and super convenient. Plus, it has protein, vegetables, carbs and fat!

    Ingredients

    I'm gluten-free and dairy-free, so I used gluten-free and dairy-free gnocchi. Feel free to use regular gnocchi if you do not have any dietary restrictions!

    I also used coconut milk to keep this recipe dairy-free, you can use regular milk or cream if you are not dairy-free.

    Instructions

    Chop your vegetables and mince garlic.

    To a large pan, add vegetables and saute 5-7 minutes.

    Stir in spices.

    Sprinkle in arrowroot powder and stir thoroughly.

    Pour in broth and gnocchi bring to a simmer.

    Stir in chicken. Simmer for 5-7 minutes until gnocchi is soft.

    Add in coconut milk, serve and enjoy!

    Tips & Tricks

    Prep the vegetables ahead for a quick weeknight dinner! You can also use mirepoix and frozen peas to make this meal even easier.

    Use rotisserie chicken to make this dinner super quick!

    To thicken this Chicken Pot Pie Gnocchi, add extra arrowroot starch. To thin it out, add more coconut milk and/or broth!

    Adjust the spices based on preference! Feel free to adjust and add more seasoning at the end.

    Make sure to add the arrowroot powder before the liquid and stir thoroughly to avoid clumps!

    Variations

    Vegetables: Try adding extra vegetables like mushrooms, broccoli, asparagus or fennel.

    Spicy: Add red pepper flakes or chili oil to make a spicy version of this Chicken Pot Pie Gnocchi.

    Broth: Use any broth you have on hand! You can also add bone broth for extra protein.

    Low Histamine: If you are making this recipe low histamine, use a gnocchi, coconut milk and broth that you tolerate. If you do not tolerate any packaged broth, try making my meat broth.

    Can I skip the coconut milk?

    Yes, you can skip the coconut milk, but it won't be as creamy!

    Equipment

    • 1 pot
    • 1 spoon

    Ingredients

    • 1 tbsp olive oil
    • 3 carrots
    • 4 celery stalks
    • 1 onion
    • 1 shallot
    • 1 1/2 cups peas
    • 3 cloves garlic
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp salt
    • 1 tsp sweet paprika (optional)
    • 1/2 tsp black pepper
    • 2 tbsp arrowroot powder
    • 2 cups chicken broth
    • 1 package gnocchi 17.5 oz
    • 1 lb shredded chicken
    • 3/4 cup coconut milk

    Instructions

    • Chop vegetables and mince garlic.
    • In a large pot or pan, saute vegetables and garlic in a pan over medium heat for 5-7 minutes until softened.
    • Add in seasoning and stir to coat.
    • Sprinkle in arrowroot powder and stir well.
    • Pour in chicken broth and bring to a gentle simmer.
    • Stir in gnocchi and shredded chicken.
    • Simmer for 5-7 minutes, until gnocchi is cooked and tender.
    • Stir in coconut milk. Let it warm (not boil).
    • Serve warm and enjoy!
