    The Best Fresh Pomegranate Hazelnut Salad

    This salad is one of my favorites and I know you will love it too! I am obsessed with the flavor combination of pomegranates and hazelnuts. Pomegranates are not only beautiful but also packed with vitamins, antioxidants, and other beneficial nutrients. Adding hazelnuts to the mix creates a perfect combination of sweet and nutty flavors that will take your salad game to the next level. I am so excited to share the recipe for the best fresh pomegranate hazelnut chicken salad that is both delicious and healthy. This salad is also gluten-free and dairy-free (duh)!

    Equipment Needed

    All you need for this recipe is a baking sheet. If you are cooking your chicken, you will also need a baking dish. I like to use rotisserie chicken for this to save time!

    Ingredients Needed for This Fresh Pomegranate Hazelnut Chicken Salad

    Chicken: I like to use a rotisserie chicken for this to make it quick and easy. You can also cook chicken breasts and shred them.

    Lettuce: I have been obsessed with butter lettuce lately, but you can use any type of lettuce you prefer!

    Pomegranate Seeds: You can purchase a whole pomegranate and remove the seeds. Most stores also sell containers of pomegranate arils also.

    Red Onion: This is totally optional! Sometimes I add it in and sometimes I don't.

    Hazelnuts: I LOVE roasted hazelnuts and this is my favorite part of the salad.

    Salt/Seasoning: This is for the hazelnuts.

    Dressing: I like to use olive oil on this but pairing it with any vinaigrette would work!

    How to Make The Salad

    Preheat oven to 400° F. Place the hazelnuts on a baking sheet. Sprinkle with salt, drizzle with oil and add seasoning if you prefer (I like to use garlic powder). Bake for 15 minutes or until toasted. Combine all ingredients in a bowl.

    Substitutions and Variations

    This salad is easy to adapt if you would like to swap out ingredients or add additional ingredients. If you would prefer a different nut, you can try something else. If you have a nut allergy, you can swap in a seed.

    Storage

    Once you assemble the salad, I recommend consuming it immediately!
