This gnocchi Alfredo is one of my best creations yet. Gnocchi is one of my absolute favorite foods, so I have experimented with tons of different flavors and dishes. I am also gluten-free and dairy-free, so I am always making classic dishes with ingredients that I can have. One day, I came up with the idea to add dairy-free Alfredo sauce to gnocchi instead of pasta. It is truly an insane combination. Pillowy gnocchi combined with creamy sauce, what more could you ask for?

- Gnocchi: The pasta base of this recipe. I used gluten-free gnocchi because I'm gluten-free!
- Cashews: Make up the base of this dairy-free gnocchi sauce, which makes it creamy.
- Lemon: Adds brightness to the sauce.
- Almond milk: Helps with the texture of the sauce.
- Avocado oil: Blended into the sauce for creaminess.
- Garlic: Adds so much flavor to this dish!
- Onion: Builds a savory base of flavor for the sauce.
- Spices: Salt & pepper to season everything.
Recipe Variations
- Sauce: Use a store bought Alfredo sauce instead!
- Protein: Try a different protein to switch it up! Shrimp, chickpeas or sausage are delicious in this recipe.
- Gnocchi: I used gluten-free gnocchi, but you can also use regular gnocchi, sweet potato gnocchi or cauliflower gnocchi in this recipe.
- Cooking method: Try pan frying the gnocchi or air frying it instead of boiling it for a crispier option!
How To Make Alfredo Gnocchi

Step 1: Add garlic and onion to a pan and cook until lightly browned. Remove from pan.

Step 2: Add chicken to pan and cook until done.

Step 3: While chicken is cooking, prepare gnocchi according to package.

Step 4: Blend ingredients for sauce in a high-speed blender.

Step 5: Remove chicken from pan, add sauce and gnocchi. Slice chicken and add on top. Enjoy!
Recipe Tips
- Make sure to soak your cashews before blending to make the sauce super creamy!
- Don't overcook the gnocchi. Boil it until it floats to the top and pull it out right away.

Storage and Make Ahead Tips
Store this Alfredo gnocchi in an airtight container in the refrigerator for up to 5 days. Reheat before serving and add a splash of milk to thin out the sauce.
If you are serving this gnocchi for a party, I would recommend combining the sauce, gnocchi and chicken right before serving.

- 1 lb chicken breast
- 1 package gnocchi
Dairy-Free Alfredo Sauce
- 1 1/2 cups cashews soaked
- 1/2 lemon juiced
- 1/2 cup almond milk
- 2 tbsp avocado oil
- 2 cloves garlic
- 1/2 sweet onion chopped
- dash salt
- dash pepper
