    Gluten Free Pop Tarts (Vegan)

Well, get ready to relive that happy memory with a healthier, homemade twist! Making pop tarts at home might seem intimidating, but trust us, it’s not as hard as you think! This recipe uses simple ingredients to create a flaky pastry dough that surrounds your favorite sweet jam and nut or seed butter. These single-serve treats are perfect for after-school cravings or a sweet treat! They’re also a fun and delicious option for picnics, road trips or anytime you want a taste of childhood.     History of Pop Tarts

    In case you aren’t familiar with the history of pop tarts, in the early 1960’s Kellogg’s main competitor, Post, invented a way to dehydrate food and keep it fresh in foil packaging. Originally used for dog food, they planned to adapt it for a breakfast pastry called “Country Squares.” Post announced Country Squares to the press, but hold off on releasing them. Kellogg’s, hearing the news, rushed to develop their own toaster pastry.

    In 1964, Pop Tarts were born! The first flavors were strawberry, blueberry, brown sugar cinnamon, and apple-currant (later changed to just apple). They were unfrosted at this point. In 1967, Kellogg’s develops frosting that can survive the toaster heat, leading to the first frosted Pop Tarts. Today, over 24 flavors exist, including modern favorites like hot fudge sundae, s’mores and more.

    One of my favorite things to do is take processed snacks or treats and make them allergy-friendly and healthier!

    Equipment Needed

    All you need to make these gluten free pop tarts is a bowl, spoon, baking sheet, rolling pin and measuring cups and spoons.

    Ingredients Needed

    Gluten Free Flour: I usually use Bob’s Red Mill Paleo Flour in my recipes. If you need a nut-free version, any 1:1 flour should work.

    Coconut Oil: This acts as the “butter” in the recipe. You can also use melted vegan butter.

    Coconut Sugar: Coconut sugar is my favorite refined sugar-free sweetener!

    Flax Egg: The flax egg in this recipe acts as a binder.

    Vanilla: I love the flavor vanilla extract provides in baked goods.

    Nut Butter: I used Sunbutter here because it is nut-free and so creamy!

    Jelly: I used my homemade blueberry chia jam here! Feel free to use any store bought jelly or jam as well.

    Powdered Sugar: I used powdered sugar to make an easy 2-ingredient icing!

    Milk: Dairy free milk is added to the powdered sugar to make icing.

    Sprinkles: Sprinkles are a fun way to make this gluten free pop tart look pretty, but they are totally optional!

    Step-By-Step Instructions

    Step 1: Gather your ingredients and preheat oven to 350°F.

    Step 2: Combine ingredients to make pop tart in a bowl.

    Step 3: Divide dough in half. Roll each piece into a rectangle.

    Step 4: Place one rectangle on baking sheet.

    Step 5: Add sunflower seed butter and jam to the middle, making sure not to get it too close to the edges.

    Step 6: Add the other dough rectangle on top.

    Step 7: Seal by using a fork to make indentations along the perimeter.

    Step 8: Bake for 18-20 minutes.

    Step 9: While pop tart is baking, make icing.

    Step 10: Drizzle icing on top and add sprinkles.

    How to Make A Flax Egg

    Making a flax egg is very easy! Here’s what you’ll need:

    • 1 tbsp ground flaxseed meal (also called ground flaxseeds)
    • 3 tbsp water

    In a small bowl, mix together the ground flaxseed meal and water. You can use warm water, but it’s not necessary.

    Let the mixture sit for 5-10 minutes, or until it thickens up and becomes gel-like. This is key, as it mimics the binding properties of an egg.

    That’s it! Your flax egg is ready to use in your recipe!

      Storage

      This is a single-serve recipe, so I doubt you will have leftovers, but if you want to prep some ahead of time feel free to store them in the refrigerator for 3-5 days or in the freezer for up to 3 months.

      There are so many different variations you can create of these gluten free pop tarts!

      Filling: I used sunflower butter and jelly for the filling but there are so many different flavor combinations to try. Try out brown sugar and cinnamon, chocolate hazelnut spread or different flavored jams!

      Toppings: I used colorful sprinkles and icing on these gluten free pop tarts. Feel free to try out different types of sprinkles, nut butter or melted chocolate on top too!
