    Equipment Needed

    All you need for this recipe is a high-speed blender to make the dressing and a few ball jars for meal prep!

    Ingredients Needed

    For the dressing:

    Olive Oil: I like to make sure I am using a high quality and organic olive oil here. I like to use COOC certified olive oil because it goes through the most stringent testing. You can read more about that here if you’re interested.

    Lemon: This gives the dressing a tart and light flavor!

    Coconut Milk: I love the flavor of coconut milk in the dressing and I would not recommend swapping it for a different milk.

    Almond Butter: I would recommend using organic almond butter if possible! You could also swap this for cashew butter or sunflower butter if you need nut-free.

    Ginger: Ginger has so many benefits and I love including fresh ginger in my recipes!

    Garlic: Fresh garlic has so many benefits as well! You can use garlic powder here though if you do not have fresh garlic on hand!

    For the salad:

    Purple Cabbage: This gives the salad a nice crunch and some color!

    Cucumber: The cucumber gives this salad a very fresh taste!

    Carrots: If you want to make this quick and easy, you can grab a bag of shredded carrots. There is also the option to shred them yourself!

    Mango: I love adding fruit into my salads!

    Green Onions: These are great to add in for some extra flavor!

    Shredded Chicken: My favorite hack for this is purchasing a rotisserie chicken because it makes this process so easy!

    Greens: You can use any type of greens you prefer!

    How to Make The Dressing

    Combine all of the ingredients for the dressing in a high-speed blender. That’s it. Super simple!

    How to Make The Asian Chicken Salad Jars

    The most important hack for jar salads is to put the dressing on the bottom and the lettuce on the top. First, pour in the dressing, dividing it equally between four jars. Then, layer with purple cabbage, cucumber, shredded carrots, mango, green onion, chicken and lettuce.

    Substitutions and Variations

    If you do not feel like making homemade dressing, you can definitely purchase store bought dressing. To make this recipe nut-free, you can swap out the almond butter for sunflower butter.

    Ingredients

    • 1/4 cup olive oil
    • 1/2 lemon, juiced
    • 1/4 cup coconut milk
    • 3 tbsp coconut aminos
    • 1 tbsp almond butter
    • 1 tsp ginger
    • 1 clove garlic
    • 1 purple cabbage, chopped
    • 1 cucumber, chopped
    • 1 bag shredded carrots
    • 1 mango, chopped
    • 3/4 cup green onions
    • 1 rotisserie chicken (or a package of cooked chicken breasts)
    • 1 package lettuce
    • crispy rice noodles (optional)

      what size jars do you use or recommend? Ive been wanting to create jar salads for awhile now but whenever i look at canning jars i feel they are either too little or too big and then leave the store empty handed.
