    Buffalo Chicken Popcorn Nachos

    These Buffalo Chicken Popcorn Nachos are the perfect game day snack. Instead of chips, we are using popcorn as the nacho vehicle! This is a quick, easy one pan wonder packed with delicious flavor. The best part is that it's ready in under 20 minutes and can be customized to any flavor preference!

    I'm sure you've never heard of popcorn nachos and you're just going to have to trust me on this! What could be bad about popcorn layered with buffalo chicken and smothered in cheese sauce and ranch? Literally nothing.

    This snack is perfect to make for the next football game or the Super Bowl! It's super customizable and you can experiment with the flavors. If you are making a game day spread, you definitely need to serve this with my Big Mac Potato Skins, Crispy Air Fryer Gnocchi and Chicken Nugget Charcuterie Board. I promise your guests will be so impressed!

    It's also very easy to make gluten-free, dairy-free and allergy-friendly! I have lived with food allergies for 8+ years (more on my wellness journey here) so I am an expert at making allergy-friendly recipes. My mission is to make recipes that are insanely delicious that everyone can enjoy!

    Buffalo popcorn: I used the new Lesserevil x Primal Kitchen buffalo popcorn collab for the base of this snack!

    Cheese: I used my homemade cashew cheese sauce to keep this dairy-free! It only takes 5 minutes to whip up and you can also use it on pasta or as a dip!

    Ranch: I used store bought dairy-free ranch, but you can also use my homemade dairy-free ranch dressing. It's also perfect for salads or dipping wings!

    Buffalo sauce: I used Primal Kitchen buffalo sauce to keep these Popcorn Nachos dairy-free!

    Equipment Needed

    You can use any baking sheet you have on hand for this recipe, but I love using my Our Place Pan because it has sides and keeps the popcorn on the tray really well! It's also non-toxic and gorgeous.

    Instructions

    Add buffalo popcorn to baking sheet.

    Layer with chicken, honey (optional), cheese sauce, buffalo sauce and jalapeño. Bake for 15-20 minutes at 350°F.

    Add ranch, extra buffalo sauce and green onion on top and enjoy!

    Variations

    Meat: I used shredded chicken, but you can also try using steak or ground beef!

    Sauces: Play around with different sauces like BBQ sauce, hot sauce, honey mustard or green goddess.

    Flavor profiles: The options are honestly endless here. You could make Mediterranean popcorn nachos, pizza popcorn nachos or even elote popcorn nachos.

    Tips & Tricks

    Use rotisserie chicken to make shredded chicken super quickly!

    Drizzle the sauces to make sure they are evenly distributed throughout the dish.

    Add the ranch and green onion after baking.

    Eat immediately! These are best eaten right away and I do not recommend storing them.

    • 1 bag buffalo popcorn
    • 2 tbsp honey (optional)
    • 1 bottle buffalo sauce
    • 1 lb shredded chicken
    • 3/4 cup cheese sauce
    • 1/2 sweet onion
    • 1 jalapeño
    • 1 tbsp green onion

    • Preheat oven to 350ºF.
    • Add popcorn to the baking sheet.
    • Layer on honey, buffalo chicken, cheese sauce and jalapeño.
    • Bake for 15-20 minutes.
