This cinnamon roll syrup is one of my favorite coffee syrups I've ever made! It literally tastes like a cinnamon roll in a mug. It works well in hot and iced coffee and also matcha or tea. It has the most delicious flavor and it comes together with only a few ingredients, takes ten minutes and you just need one pot.
It has been years since I have gone to Starbucks. I like to make my coffee at home because it is more cost-effective and I can make it with better-for-you ingredients. It's also naturally gluten-free and dairy-free. This syrup is perfect to prep and keep in your fridge for the week. Homemade syrups also make amazing gifts for the holidays!
Ingredients You'll Need

- Coconut sugar: I like to use coconut or date sugar to keep it refined sugar-free.
- Water: Dissolves the sugar and helps create the syrup's base.
- Sea salt: Balances the flavor.

- Sweetener: I used coconut sugar, but you can also use date sugar, maple syrup, honey or regular sugar!

How To Make Cinnamon Roll Coffee Syrup

Step 1: Combine cinnamon sticks, water, sugar and salt in a pot and cook on low-medium, stirring frequently for about 10 minutes.

Step 2: Remove from heat and add vanilla extract.

Start with 1 tbsp per drink and add more to taste. For a bakery-style drink, top with whipped cream and a sprinkle of cinnamon.
