    My ultimate lazy summer dinner: the one-pan summer gnocchi sheet pan! Picture this: pillowy gluten-free gnocchi mingling with vibrant zucchini, sweet bell pepper and savory red onion, all roasted to perfection in a glorious symphony of flavors, drizzled generously with luscious olive oil. I opted for vegan cheese, which adds a delightful creaminess to the dish. The best part? It's a minimal effort, quick and easy recipe! Trust me; you won't believe how something so effortless can be so incredibly flavorful.

    All you need for this recipe is a baking sheet.

    Ingredients Needed

    Gnocchi: I used gluten-free and vegan potato gnocchi!

    Vegetables: You can mix it up here but I used peppers, broccoli, red onion and zucchini! Using frozen veggies here is a great hack as well!

    Olive Oil: I always use high quality and organic olive oil when I can.

    Dairy-Free Cheese: I love using dairy-free feta here.

    How to Make This Delicious Summer Gnocchi Sheet Pan

    To make this sheet pan gnocchi, all you do is pour the ingredients onto a baking dish. Bake at 350ºF for approximately 30 minutes, or until the gnocchi is slightly crispy and the vegetables are fully cooked.

    Do you need to boil the gnocchi?

    Nope! All you do is bake it on the sheet pan. It gets nice a crispy, but is still pillowy and delicious.

    What if I want this to be a higher protein meal?

    I love to pair this sheet pan with ground turkey, chicken or sausage. Feel free to add that in!
