    Easy Chicken Satay Skewers with Homemade Sauce

    These Easy Chicken Satay Skewers with Homemade Sauce are the perfect meal prep for a busy week. They are packed with flavor and super simple to throw together. The chicken is so juicy and tender, thanks to the delicious coconut milk-based marinade. I love dipping these skewers in a rich homemade satay sauce. The sauce is made with sunflower butter instead of peanut to make it allergy-friendly! This dish is also gluten-free and dairy-free!

    A flavorful lunch is hands down one of my favorite pleasures in life because it really helps you get through the day. If I have a yummy meal prep sitting my fridge or freezer, I am excited once meal time rolls around. These Chicken Satay Skewer meal preps will make you feel that way! If you are looking for more (not boring) gluten-free chicken recipes, I have tons!

    The marinade is super simple and consists of coconut milk, coconut aminos, sugar and spices! The satay sauce is also super easy, you just whisk together coconut aminos, sunflower butter, lime and honey. I love serving these chicken skewers over a bed of rice with tons of veggies. This meal is a great way to get in tons of colors!

    This meal prep is creamy, flavorful and super customizable. You can have it for lunch, dinner or even serve these skewers as an appetizer for your next party. They are also kid-friendly! Truly restaurant quality- I am so excited for you to try them!

    Ingredients

    chicken satay ingredients including honey, coconut milk, sugar, turmeric, ginger, parsley, garlic powder, salt, bell peppers, carrots, sunflower seed butter, lime, green onion, cucumber, cabbage and chicken breast

    I love using this sunflower seed butter because it is organic and one simple ingredient! I used this to make this recipe allergy-friendly, but you can also use peanut if you are not allergic/tolerate it!

    I used coconut aminos in this recipe because I am not able to have soy, but you can also use soy sauce if you prefer!

    Instructions

    Combine ingredients for marinade.
    Add chicken to marinade and let soak for 30 minutes in the refrigerator.
    Add chicken to skewers.
    Cook skewers in an oiled pan on medium heat about 5 minutes per side.
    Chop vegetables and herbs.
    Whisk together satay sauce ingredients.
    Assemble bowls!

    Variations

    Try out a different meat for this skewer recipe. You can also use beef, pork, shrimp, fish or tofu.

    Experiment with different vegetable pairings. Try out red onion, zucchini, mushrooms, broccoli or bean sprouts.

    Add some spice. Adding curry paste, red pepper flakes or sriracha to the sauce or marinade will give this recipe a delicious kick!

    You can make these in a pan or you can grill them when the weather is nice!

    Tips & Tricks

    I love using metal skewers for my kabobs because I don't have to worry about soaking them.

    I like to marinate the chicken for at least 30 minutes. If you are in a rush, you can do 15 and it will still create flavor!

    Warm up the satay sauce for a rich and delicious sauce to drizzle onto your chicken!

    Sauce tips: add honey or lime to adjust to your liking! You can also use coconut milk or water to thin and garlic powder or ginger to amp up the flavor.

    Equipment

    • 2 bowls
    • 1 whisk
    • 1 pan
    • 4 skewers
    • 1 cutting board
    • 1 knife

    Ingredients

    • 2 lbs chicken breast
    • 3 carrots
    • 1/4 purple cabbage
    • 2 bell peppers
    • 2 cups cooked white rice (for serving)
    • 1 cucumber
    • 1 tbsp green onion (for serving)
    • 1 tbsp parsley or cilantro (for serving)

    Chicken Marinade

    • 1 tsp garlic powder
    • 1/2 tsp turmeric
    • 1 tsp ginger
    • 2 tbsp coconut aminos
    • 3/4 cup coconut milk
    • 1/2 tsp salt

    Satay Sauce

    • 2 tbsp honey
    • 1/2 cup sunflower seed butter
    • 1/3 cup coconut aminos
    • 1/2 lime, juiced
    Get Recipe Ingredients

    Instructions

    • Combine ingredients for marinade in a bowl.
    • Add in cubed chicken and marinate for about 30 minutes in the refrigerator.
    • Place chicken onto the skewers.
    • Add to an oiled pan and cook on medium heat until done or chicken reaches an internal temperature of 165°F.
    • Chop vegetables.
    • Whisk together ingredients for the sauce.
    • Assemble bowls by adding rice, vegetables, chicken and sauce to each container and store or serve!
