If you’re looking to level up your weeknight dinner or impress at your next springy lunch gathering, this Green Goddess Chicken is it. Made with tender chicken thighs and a creamy, herbal marinade that’s completely dairy free, this recipe is everything: bright, saucy and bursting with fresh herbs. It’s the perfect way to use up leftover herbs hanging out in your fridge and the results are juicy, moist and packed with flavorful goodness.

Whether you’re grilling, baking or air-frying, the marinade forms a light, crispy crust on the outside while keeping the inside wholesome and tender. This dish is simple to prep, adaptable and flexible—serve it hot or cold, in a bowl, wrap or salad. It’s bringing so much bright spring energy and I am so here for it! The best part is that it’s so easy to throw together and takes less than 30 minutes to make. If you use a store bought dressing, it’s also ready in no time! If you love this green goddess chicken, you will also love my lemon chicken gnocchi, Greek lemon chicken and potatoes and lemon chicken and meatballs!
