    These Chicken Hummus Bowls are quick, flavorful, satisfying and come together in under 30 minutes! They are protein-packed featuring juicy chicken, crispy cucumber, tangy red onion, crunchy cabbage and creamy hummus. I love how customizable these bowls are and you can switch up the toppings for any dietary restrictions, food allergies or preferences! These bowls are easily made gluten-free and dairy-free and they also make a delicious meal prep lunch bowl!

    Equipment Needed

    To make these Chicken Hummus Bowls, you will need a pan, cutting board, knife and bowls to serve!

    Since I am on a journey healing several chronic symptoms, I focus on reducing toxins in my life where I can. Because of this, I have made several non-toxic swaps. I love using stainless steel pans and wooden cutting boards instead of toxic teflon pans or plastic! If you cook a lot, these are a great swap to make!

    Ingredients Needed

    Hummus: This makes up the base layer of these Chicken Hummus Bowls. I like to make homemade hummus (that's because I have a sesame allergy), but you can also use store bought hummus! Using store bought hummus makes this dish much quicker.

    Chicken breast: I use chicken breast in this recipe to add protein. I love using paprika, garlic powder and pepper to make the chicken super flavorful! You can also use rotisserie chicken to make this recipe quicker!

    Vegetables: I used cucumber, red onion and purple cabbage in this bowl!

    Dip: Adding a creamy dip is totally optional, but I love pairing this with my dill yogurt dip. It only takes 5 minutes to whip up!

    Fresh herbs: This is also optional, but I love topping my bowl with fresh parsley and dill!

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Add your chicken breasts to an oiled pan and season with paprika, garlic powder and salt. Cook on medium 7-8 minutes per side.

    Step 3: While chicken is cooking, chop your vegetables.

    Step 4: Assemble your bowls by adding hummus to the bottom and placing chicken breast and vegetables on top. Add dip (optional), serve and enjoy!

    Store the components for these Chicken Hummus Bowls separately for freshness!

    If you are low histamine and need to freeze this recipe for prep, I would recommend cooking and freezing the chicken breasts and hummus (if you are making homemade hummus) and then adding the vegetables when serving!

    These Chicken Hummus Bowls are super adaptable and you can experiment with several different flavors!

    Protein: Swap out the chicken for beef, turkey or fish instead!

    Vegetables: Try adding tomato, olives, cauliflower or other veggies you love.
