These homemade gluten-free breakfast sausages the best sausages I've ever had! I've been gluten-free for 8 years and I've tried a lot of breakfast sausages. After experimenting for years, I landed on this flavor combination that I am obsessed with. The honey and garlic give these sausages so much flavor, the zucchini gives them moisture and the flaxseed helps hold these sausages together. It's what I use in pretty much all of my baking recipes too since I don't eat eggs either. Personally, ground chicken is my favorite meat to use for breakfast sausages, but any ground meat works! There is nothing worse to me than a dry piece of meat, so I have made sure that these sausages are juicy and flavorful. I love making them in the air fryer and having a batch on hand for the week so I can hit my protein goals!

Why You'll Love These Chicken Breakfast Sausages

These homemade breakfast sausages are gluten-free, dairy-free, egg-free and contain no preservatives. They are juicy, flavorful and super easy to make. I love prepping them for the week because they help me hit my protein goals. Plus, I always feel better when I make them at home versus purchasing the pre-packaged options from the store.

You only need a few ingredients to make this breakfast option and you can cook them in the air fryer, on the stovetop or in the oven, depending on your preference! Either way, they are impossible to mess up.

    Ingredients You'll Need

    ingredients for homemade breakfast sausages
    • Ground chicken: I love using a lean meat for breakfast sausages!
    • Almond flour: Acts as a gluten-free binder. You could also use breadcrumbs!
    • Zucchini: Helps add moisture to this recipe and sneaks in a veggie!
    • Flaxseed: Adds fiber and acts as an egg replacement.
    • Honey: Adds sweetness and helps create the honey garlic flavor profile.
    • Garlic: Fresh or powder both work!
    • Salt: Essential for overall taste.

    Recipe Variations

Meat: I love using ground chicken, but you can also use ground turkey, beef or pork.

Sweetener: I used honey, but you can also use maple syrup or agave.

Flavor combinations: Try out different flavor combinations like apple cinnamon, lemon rosemary, maple sage or paprika! The options are endless.

Step 3: Air fry for 12-14 minutes at 375°F. Serve and enjoy!

    Cooking Methods

I love making these chicken breakfast sausages in the air fryer, but you can also make them in the oven or in a skillet.

    Stovetop (pan) instructions:

Heat a skillet over medium heat. Place patties in the pan and cook 4-5 minutes per side, or until golden brown.

    Oven (baked) instructions:

Preheat oven to 400°F. Line a baking sheet with parchment paper. Place patties on baking sheet and bake for 15-18 minutes until golden.

    Recipe Tips

    • Squeeze out the zucchini after grating to remove moisture.
    • Wet or oil your hands before shaping the patties so the mixture doesn't stick to your fingers.

    Storage and Make Ahead Tips

These homemade breakfast sausages are perfect for meal prep and can save you so much time in the morning! Cooked patties keep 4-5 days in the refrigerator in an airtight container. They are best reheated in a skillet or air fryer, but can also be warmed up in the microwave!

For freezing, let patties cool completely and store in a freezer bag. Reheat from frozen in the air fryer, in a skillet or in the microwave.

    How to Serve

    • As part of a classic breakfast plate alongside scrambled eggs and breakfast potatoes!
    • With a side of fresh fruit.
    • Paired with a smoothie for an easy high-protein breakfast.
    • Dipped in a delicious sauce like my green goddess sauce! (My personal favorite way to eat them)!
