These wraps are not only bursting with flavor but also offer a blood sugar-friendly option that will leave you feeling satisfied and energized.     Butter Lettuce: I love using fresh butter lettuce for the wraps because they add a delicious crunch!

    Ground Chicken: I always look for high quality and organic meat when I can! Also, I like to make sure the ingredients are simple and there are no added oils. Look for chicken that is just chicken and possibly rosemary.

    Carrots: Carrots add a nice crunch into this recipe! Plus, they are packed with nutrients including beta carotene and antioxidants.

    Green Onions: These green onions add extra color, flavor and freshness into these Thai chicken lettuce wraps!

    All you do to make these Thai chicken lettuce wraps is combine the chicken, carrots, green onions, ginger, garlic, sunflower butter, coconut aminos and salt in a large bowl. Fill lettuce with the mixture and enjoy!

    Substitutions and Variations

    Feel free to swap the chicken out for another type of ground meat if you prefer! You can also swap out the sunflower butter for nut butter. Feel free to add in other veggies if you would like.

    Storage

    I would recommend storing the filling separate from the lettuce wraps and then assembling them on the day you are going to eat them! The mixture can be stored in the fridge for up to 4 days.

    • 1 package butter lettuce
    • 1 package ground chicken, cooked
    • 2 shredded carrots
    • 2 green onions, finely chopped
    • 1 tsp shredded ginger
    • 1 clove garlic, minced
    • 2 tbsp sunflower butter or nut butter
    • 2 tbsp coconut aminos
    • Dash salt
