This spaghetti squash with ground beef is perfect for dinner, meal prep or a dinner party!

This dish is low-carb and protein-packed.

    Equipment Needed

All you need to make this spaghetti squash with ground beef is a baking sheet, pan, cutting board, knife and mixing spoon.

    What Is Spaghetti Squash?

Spaghetti squash is a type of winter squash that gets its name from its unique texture. When cooked, its flesh separates into long, noodle-like strands, resembling spaghetti. It’s a versatile vegetable that can be used in a variety of dishes, making it a popular choice for those looking for a low-carb alternative to traditional pasta.

How Do You Cut A Spaghetti Squash?

My best hack for cutting a spaghetti squash is poking holes in it with a fork and microwaving it for 5 minutes, or until tender. Let it cool and then cut through it! It will be much easier to cut.

    Ingredients Needed

Spaghetti Squash: Spaghetti squash is the star of this recipe! It serves as a low-carb and delicious option! It is also fun to eat directly out of the squash.

Ground Beef: Ground beef adds protein and flavor to this dish.

Salt and Spices: I used garlic powder and salt in this recipe!

Vegetables: I used zucchini, red pepper and onion to add nutrients and flavor to this recipe.

Pesto: I love using pesto as a sauce for this spaghetti squash!

Cheese: Cheese adds creaminess and flavor to this recipe. Feel free to use dairy free cheese!

    Step By Step Instructions

Step 1: Gather your ingredients and preheat your oven to 400°F.

Step 2: Cut the spaghetti squash in half lengthwise.

Step 3: Scoop out the seeds.

Step 4: Add oil, garlic and salt to the spaghetti squash and place face down on the baking sheet. Bake for 35-45 minutes, or until squash is soft.

    Step 5: Chop the vegetables.

Step 6: While spaghetti squash is baking, add ground beef, onion, red pepper and zucchini to a pan and cook until browned. Add in pesto.

Step 7: Add mixture into spaghetti squash and bake for 7 more minutes. Serve and enjoy!

    Storage

Store this spaghetti squash with ground beef in an airtight container in the refrigerator for 3-5 days.

    Variations

Meat: I used ground beef in this recipe, but feel free to use any meat you like! Try out ground chicken, ground turkey or sausage!

Sauce: I like using pesto in this recipe, but you can also use marinara or another sauce.

Vegetables: I used zucchini, red pepper and onion for this spaghetti squash, but feel free to use other vegetables! Tomatoes, spinach, broccoli and peppers are other great options!
