    Gluten Free Taquitos

    These gluten free taquitos are a delicious, easy-to-make gluten-free appetizer or main dish! They're crispy, packed with flavor and perfect for weeknight dinners or special occasions. These taquitos are made with a simple filling of shredded chicken and green sauce. They're then wrapped in gluten free tortillas and baked until golden brown. The result is a delicious, handheld food that everyone will love. They're perfect for football Sundays too! Serve your taquitos with your favorite dips and toppings, such as guacamole, queso, avocado, fresh salsa, sour cream, lettuce and chopped cilantro. They're also great with salsa for dipping! It can be impossible to find gluten free taquitos, so that's why I wanted to make a homemade version for everyone to enjoy!

    What Are Taquitos?

    Taquitos are a Mexican dish consisting of a small rolled-up tortilla that contains filling, including beef, cheese or chicken. They are a popular street food in Mexico and are also commonly found in Mexican restaurants in the United States. They are a delicious and easy-to-eat snack or meal. The dish is often topped with condiments such as sour cream and guacamole. Corn tortillas are generally used to make taquitos.

    Taquitos are similar to rolled tacos, but they are typically smaller and thinner. They are also often made with corn tortillas, while rolled tacos can be made with either flour or corn tortillas.

    Equipment Needed

    All you need to make these gluten free taquitos is a baking dish and a baking sheet.

    Ingredients Needed

    Chicken Breast: To make these gluten free taquitos, I used chicken breast and cooked it in the green sauce. Alternatively, you can also use leftover shredded chicken or rotisserie chicken to make this quicker! I try to use high-quality meat whenever I can. My favorite place to get my meat is Butcher Box because they have organic and high-quality options and it gets delivered right to your door! 

    Green Sauce: I cooked the chicken in green sauce because it gives it the most delicious flavor! This is the green sauce I used! This recipe is super adaptable though and you can use any sauce or spices you would like!

    Tortillas: When it comes to gluten free tortillas, there are a lot of options! Personally, I used Siete tortillas here, but you can also use corn tortillas or any other brand of gluten free tortillas.

    Toppings: There are so many toppings and dipping sauces that can be used for taquitos. The options are honestly endless! Some of my favorite sauces to use are: salsa, guacamole, queso fresco, sour cream, ranch dressing, chipotle sauce, enchilada sauce, tomatillo salsa verde and. jalapeño cream sauce. These are also delicious topped with cheese. I am dairy free so I used dairy free cheese here, but feel free to use regular cheese as well. These taste delicious topped with pico de gallo, shredded lettuce, chopped tomatoes, chopped onions, chopped cilantro, sliced jalapeños, pickled jalapeños, pickled red onions, radishes and avocado or guacamole as well! Get wild with it!

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Zucchini, carrots, onion, beets, garlic, ground beef, chicken stock, Himalayan salt, and spices on a white surface.

    Step 2: Place chicken in a baking dish and pour over green sauce. Bake for 30-35 minutes at 350°F, or until fully cooked. Shred the chicken.

    Step 3: Warm tortillas in a pan, microwave or in the oven. This will make them more pliable. Stuff with chicken mixture, roll up and place on a baking sheet. Bake for another 20 minutes, or until tortillas are crispy.

    Step 4: Top with your favorite toppings and serve with your favorite dipping sauces!

    Storage

    These gluten free taquitos can be stored in the refrigerator or freezer. To store them in the fridge, Place the taquitos in a single layer on a baking sheet lined with parchment paper. Cover the baking sheet with plastic wrap or foil. Refrigerate the taquitos for up to 4 days.

    To freeze these gluten free taquitos, place them in a single layer on a baking sheet lined with parchment paper. Freeze the taquitos for 1-2 hours, or until they are solid. Once they are frozen, transfer them to a freezer-safe bag or container. Freeze them for up to 3 months.

    To reheat: For refrigerated taquitos, preheat the oven to 350°F. Place the taquitos on a baking sheet and bake for 10-12 minutes, or until heated through. For frozen taquitos, preheat the oven to 400°F. Place the taquitos on a baking sheet and bake for 15-20 minutes, or until heated through. If you are reheating the taquitos in the microwave, place them on a microwave-safe plate and cook on high for 1-2 minutes, or until heated through.

    Variations

    Feel free to try multiple variations of these gluten free taquitos! There are so many ways to mix it up.

    Meat: Try out a different meat in these taquitos like ground turkey or ground beef!

    Make them vegetarian: Add vegetables and cheese in the middle instead of meat.

    Experiment with sauces: Try out a different sauce, such as buffalo sauce.

    Add some veggies: Feel free to add vegetables in these taquitos!

    My top tip for this recipe is making sure you heat the tortillas before rolling them up! Otherwise, they will break.

    There are several brands that make gluten free tortillas. Some of these brands include: Mission, Guererro and Maria and Ricardo's. It is always important to check the label to make sure.

    What is the best tortilla to use for taquitos?

    Personally, I love using Siete tortillas, but corn tortillas work too!

    How do you prevent tortillas from cracking?

    To prevent the tortillas from cracking, warm them before rolling!

        Hi! I really like Violife and Miyoko's for vegan cheese or Primal Kitchen for vegan cheese sauce. Sour cream is tougher honestly but I heard Elmhurst is coming out with one! I sometimes will use coconut yogurt instead of sour cream.
