    This steak grain bowl is the perfect quick and hearty meal that’s packed with flavor and nutrition! This customizable dish is perfect for busy weeknights or leisurely weekends. With a base of your favorite grain and a burst of fresh, vibrant toppings, it’s an easy-to-assemble meal that’s so satisfying. It is one of my current favorite dinners! From the tender, grilled steak to the zesty chimichurri, this bowl is a delicious combination of textures and flavors. Whether you’re meal prepping for the week or simply looking for a nutritious and colorful dinner, this protein-packed bowl is a must-try. Gluten free and dairy free options make it a versatile staple for any diet. Plus, it can be made in about 30 minutes!

    All you need to make this delicious dinner is a grill, knife and a cutting board.

    Ingredients Needed

    Steak: I used ribeye steak for this steak grain bowl. My favorite place to get meat is ButcherBox because they have organic and high quality options and it gets delivered right to your door!

    Corn: I like to use sweet corn on the cob for this recipe!

    Seasoning: Feel free to use any seasoning you love for the steak and corn. I love to use salt and garlic salt.

    Grains: I used white rice for the base of this grain bowl.

    Avocado: Avocado adds delicious creaminess and flavor to this bowl.

    Onion: I used red onion in this recipe! It adds a crunch and a tangy flavor to this bowl.

    Chimichurri: Chimichurri adds a burst of fresh, herbaceous flavor to a steak bowl. Its vibrant combination of parsley, garlic and olive oil creates a zesty and complex sauce that perfectly complements the richness of the steak. It also adds a bright green color that enhances the visual appeal of the dish. Feel free to use a storebought chimichurri or make your own!

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Season and grill your corn and steak to desired doneness.

    Step 3: While steak and corn are cooking, make chimichurri sauce by combining all ingredients in a high-speed blender.

    Step 4: Cut steak, corn, avocado and onion and place over a bed of rice. Enjoy!
