    Dairy Free Egg Bites (Instant Pot)

These fluffy bites are packed with real flavor, veggies and enough protein to keep you full until lunch. Made with just simple ingredients in under 30 minutes, they’re perfect for breakfast or snack meal prep. Whip up a batch on Sunday and grab-and-go all week long. You won’t even miss the dairy! Plus, they’re freezer-friendly, so make a large batch and freeze them for easy access! Whether you’re gluten free, dairy free or just looking for a healthier version of your favorite Starbucks treat, these egg bites are the answer. They’re versatile enough to customize with endless mix-ins, so get creative and make them your own!

    Equipment Needed

    All you need to make these dairy free egg bites is an egg bite mold, Instant Pot, pan, mixing bowl, whisk cutting board and knife.

    Ingredients Needed

    Eggs: I like to use high quality eggs whenever possible. My favorite brand is Vital Farms!

    Sausage: I like to use high quality meat whenever possible. I love using Bilinski’s chicken sausages because they have great ingredients.

    Vegetables: I used broccoli, onion and mixed peppers in these dairy free egg bites. Feel free to mix up the vegetables.

    Spices: I used garlic powder and red pepper flakes in these egg bites to give them some extra flavor!

    Oil: I used avocado oil here!

    Milk: This is completely optional but I love to add a little bit of milk to mine to add moisture and fluffiness.

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Cut your vegetables and add them to an oiled pan over medium heat. Cook for 5-7 minutes, or until lightly cooked.

    Step 3: Combine egg and milk (optional) in a mixing bowl. Stir in spices and salt.

    Step 4: Add vegetables and cooked sausage into greased egg molds. Pour in egg mixture.

    Step 5: Pour 2 cups of water in the bottom of your instant pot. Add egg mold to instant pot. Cook on steam for 10 minutes.

    Step 6: Serve and enjoy!

    Storage

    Store these dairy free egg bites in an airtight container in the refrigerator for 4-5 days.

    How To Serve

    Serve these egg bites as part of a wholesome breakfast! Pair them with chia pudding, sweet potato pancakes, add them to breakfast burrito bowls or include them into a protein snack pack.

    There are endless options when it comes to what to put in these dairy free egg bites!

    Meat: Try a different meat like bacon, ham, chicken or steak.

    Vegetables: Switch up the vegetables! Add mushrooms, spinach, artichoke, jalapeños, zucchini or sweet potatoes.

    Dairy Free Options: Add in dairy free cheese or cream cheese for some extra flavor!

    Spices: Try adding oregano, thyme, smoked paprika, cumin, turmeric or chili powder!
