This deliciously captivating treat has taken the internet by storm, capturing hearts and taste buds alike with its harmonious fusion of flavors and textures. Not only is it a delightful dessert, but my version is also gluten-free and dairy-free, making it a fun and inclusive option for various dietary preferences. I also added a special ingredient- dairy-free ice cream, to make it an extra fun summer treat!

    Why You’re Going to Love This Viral Date Bark with Ice Cream

    It’s super easy to make!

    It is a fun summer treat.

    This bark is kid-friendly.

    It is also allergy-friendly and adaptable.

    Equipment Needed

    All you need to make this date bark is a plate or baking sheet.

    Ingredients Needed

    Dates: My favorite dates are Joolies! They are so delicious, organic and glyphosate-free. They are the plumpest and most flavorful dates I’ve ever tasted. If you order from their website and use my code LESSWITHLAUR you can get a discount.

    Dairy-Free Ice Cream: I used dairy-free vanilla ice cream here. Feel free to use any flavor you desire!

    Almond Butter: I used almond butter here. Feel free to use any kind of nut butter. I love ordering all of my staples (like nut butters) from Thrive Market because they have great prices and they deliver right to your doorstep. If you use my link, you can get 40% off your first order.

    Pecans: I used pecans here, but feel free to add any nut or seed!

    Chocolate: I made sure to use dairy-free chocolate here.

    Sea Salt: Flaky sea salt adds some extra saltiness to this recipe!

    Step-By-Step Instructions

    Step One: Cut dates in half and arrange on a plate or baking sheet.

    Step Two: Add flat scoops of dairy-free ice cream on top.

    Step Three: Drizzle almond butter over the top.

    Step Four: Add pecan pieces.

    Step Five: Drizzle melted chocolate on top and sprinkle with sea salt! Freeze until hardened and enjoy!

    • 1 box dates
    • 1/2 carton dairy-free ice cream
    • 3/4 cup almond butter
    • 1 cup pecans, chopped
    • 1-2 bars dairy-free chocolate
    • flaky sea salt
    Get Recipe Ingredients

    Instructions

    • Cut dates in half and arrange on plate or baking sheet.
    • Add flat scoops of ice cream on top.
    • Drizzle on almond butter.
    • Add chopped pecans.
    • Drizzle on melted chocolate and top with flaky sea salt. Freeze until hardened!
