    This watermelon pizza is the perfect refreshing twist on a classic! This creation is savory and sweet and it is one of my all time favorite summer treats. I love to make this watermelon pizza when I’m hosting a BBQ, planning a picnic or simply craving a fun snack or easy appetizer. It is a colorful masterpiece and truly a crowdpleaser!

    Imagine a crispy, cold watermelon crust topped with creamy feta, fresh mint and a drizzle of olive oil. It’s a light and refreshing side dish or appetizer that’s packed with electrolytes and perfect for those hot summer days. I love making recipes where I don’t have to turn on my oven. This watermelon pizza also comes together in just a few minutes, making it a perfect kid-friendly option! All you need is 5 simple ingredients for this fun dish.     How To Cut A Watermelon Pizza

    Using a large, sharp knife, cut the watermelon into 1-inch thick rounds. Remove the rind: Carefully cut away the rind from each round, leaving you with a flat watermelon “crust.” Cut the crust into 4 pieces.

    How To Choose A Ripe Watermelon

    I like to use these techniques to choose the best watermelon possible:

    • Field Spot: Look for a large, creamy yellow patch on one side. This indicates the watermelon ripened on the vine.
    • Skin Color: A dark, dull skin is usually a sign of ripeness. Avoid shiny or pale melons.
    • Weight: A watermelon should feel heavy for its size. This suggests it’s juicy and ripe.
    • Sound: Gently tap the watermelon. A ripe one will produce a deep, hollow sound.  
    • Shape: Choose a symmetrical watermelon without odd bumps or shapes.

    All you need to make this watermelon pizza is a knife and a cutting board!

    Ingredients Needed

    Watermelon: I used a mini seedless watermelon to make this watermelon pizza. See my above tips for choosing the best watermelon!

    Feta: I used dairy free feta in this recipe because I am dairy free. Feel free to use regular feta if you are able to tolerate it!

    Mint: Mint adds a delicious freshness to this recipe.

    Olive Oil: Olive oil brings a depth of flavor and richness that balances the refreshing qualities of the watermelon.

    Salt: I love adding flaky sea salt on top of my watermelon pizza!

    Step 2: Slice the watermelon into thin rounds and cut pieces into four triangles.

    Step 3: Top with feta and mint. Drizzle with olive oil and top with flaky sea salt (optional)!
