What is Delicata Squash?
Delicata squashes are known for having cream or pale orange exteriors with green or dark orange stripes. Delicata squash has an exterior that is much more delicate than other types of squashes such as spaghetti squash, acorn squash or butternut squash. This makes it much easier to cut. The skin is also edible! Delicata squash has a subtly sweet flavor and creamy texture!

How To Pick The Best Delicata Squash
Select a squash that is firm and has an even cream color. The skin should be smooth. Ripe delicata squash is yellow in color with green stripes along the ribs. Avoid delicata squash that is light green or has patches on it. Delicata squash is in season from September through November. They can be stored for about 3 months in a cool, dry place!

Step-By-Step Instructions
Step 1: Gather your ingredients.

Step 2: Cut the ends off your squash and slice it in half lengthwise.

Step 3: Scoop the seeds out of the middle and dispose of them.

Step 4: Slice each half of the squash into crescent-shaped pieces about 1/2 inch thick.

Step 5: Place squash in a bowl. Add oil and season with spices or seasoning of your choice! Mix it around until each piece is thoroughly coated.

Step 6: Place squash into the air fryer. Cook for 10 minutes at 400°F.


Variations
You can also cook your delicata squash in the oven instead of in an air fryer. Follow the instructions to cut the delicata squash into crescent shapes (steps 1-5 above). Preheat oven to 425°F. Place squash on a baking sheet and bake for 20 minutes, or until golden brown.
Mix up the spices! Try out cinnamon sugar, garlic salt, rosemary, taco spices or any other spices you love!
Storage
Store this Air Fryer Delicata Squash in the refrigerator for up to 5 days. This a great side dish to meal prep. It is also amazing to throw in fall salads or harvest bowls!
Reheat the leftovers in the oven on a baking sheet at 425°F until warm or put them back in the air fryer at 400°F for a few minutes. Leftovers can be used for delicious harvest salads or bowls!
