    Ingredients Needed

    Flatbread: I used homemade gluten free flatbread because I am gluten free. You can use any type of flatbread you love! You can also use a tortilla.

    Caesar Dressing: I used homemade dairy free caesar dressing because I am dairy free. You can also use a store bought version. My go to dressing recipe is this recipe from Karli (@thewellnutt)!

    Chicken Breast: Cooked chicken breast adds protein to this recipe!

    Lettuce: Romaine is a quintessential ingredient in Caesar salad, adding the signature crispness and freshness to the flatbread.

    Chickpeas: Crispy chickpeas are used instead of croutons in this recipe!

    Step By Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Toast flatbread until it is slightly crispy.

    Step 3: Pour dressing on top and spread it evenly.

    Step 4: Add lettuce, chicken, crispy chickpeas and extra dressing on top. Enjoy!

    I would recommend making this chicken caesar flatbread right before you are about to eat it. You can also pack it and bring it for lunch.

    Flatbread: I used gluten free flatbread to make this recipe gluten free. You can use any kind of flatbread you love! You can also use tortillas.

    Lettuce: I used romaine lettuce for this recipe but you can also use butter lettuce, Bibb lettuce, iceberg or spring mix.

    Vegetables: If you want to add additional vegetables to this recipe, try out tomatoes, cucumbers, red onions and artichokes.

    Dressing: I used homemade caesar dressing, but you can also use storebought dressing. You can also use ranch dressing.

    Croutons: I used crispy chickpeas in this recipe, but feel free to use regular croutons.

    Protein: I used chicken in this recipe, but feel free try out salmon, shrimp or hard-boiled eggs.

    How did you make your own gluten free flatbread?

    I modified this recipe from my friend Dani. I used 3/4 cup coconut flour, 3/4 cup arrowroot powder, 1 can of coconut milk, 1 tsp garlic powder, 1 tsp red pepper flakes and a dash of salt to make the batter. Then you just cook them in a pan over medium heat a few minutes per side!
