    This hummus chicken salad is a unique twist on classic chicken salad! Instead of using mayonnaise, I used hummus as the binder. Just trust me on this. It gives the salad a unique flavor and creaminess, while also making it naturally gluten free and dairy free. This hummus chicken salad is packed with protein and veggies. It is also easily customizable and can be made in several different flavors and combinations. This salad is so easy to make, you can throw it together in just 10 minutes.     Celery: Celery adds a nice crunch to this hummus chicken salad!

    Carrots: Carrots also add crunch and texture to this chicken salad along with additional nutrients.

    Grapes: Grapes add some sweetness to this dish.

    Red Onion: Red onions have a slightly sweet and sharp flavor that complements the chicken and other ingredients in the salad. They also add color and crunch!

    How To Shred Rotisserie Chicken

    There are two main ways to shred rotisserie chicken: by hand or using a stand mixer.

    To shred rotisserie chicken by hand:

    Remove the skin from the chicken, if desired. Remove the legs and wings from the chicken. Cut the chicken breasts and thighs into smaller pieces. Use two forks to pull the chicken meat apart into shreds. Be sure to remove any small bones from the chicken meat as you shred it.

    To shred rotisserie chicken using a stand mixer:

    Remove the skin from the chicken, if desired. Remove the bones from the chicken. Place the chicken meat in the bowl of your stand mixer fitted with the paddle attachment. Turn the mixer on low speed and shred the chicken meat until it reaches the desired consistency.

    Tips for shredding rotisserie chicken:

    • If the chicken is still hot, let it cool slightly before shredding it. This will make it easier to handle and less likely to fall apart.
    • If you’re using a stand mixer to shred the chicken, be careful not to overmix it, or the chicken will become mushy.
    • Once the chicken is shredded, you can use it immediately or store it in the refrigerator for up to 3 days.

    Store Bought Hummus Versus Homemade Hummus

    Store bought hummus is convenient and easy to use. It is also typically less expensive than making your own hummus. However, store bought hummus may contain added ingredients, such as preservatives and artificial flavors. It may also be lower in protein and fiber than homemade hummus.

    Homemade hummus can be healthier and more customizable than store bought hummus. You can control the ingredients and make it to your liking. However, homemade hummus can be more expensive and time-consuming to make.
