    These thick and chewy cookies boast a wonderful texture that’s both satisfying and delicious. Made with minimal ingredients and naturally sweetened, these one-bowl treats require no butter and no oil, making them a wholesome option that will also leave you feeling energized and full.

    Breakfast cookies are a type of cookie that is designed to be eaten for breakfast or as a nutritious snack. They are typically made with wholesome ingredients such as oats, nuts, seeds and dried fruit, and they may also contain ingredients like protein powder or chia seeds to boost their nutritional value.

    Equipment Needed

    All you need to make these gluten free breakfast cookies is a bowl, spoon, measuring cups and spoons and a baking sheet!

    Ingredients Needed

    Oats: Oats make up the base of this cookie. It is important to make sure you are using gluten free oats!

    Protein Powder: I used vanilla protein powder in these cookies. This is completely optional, but it does add some nutritional value to these cookies.

    Cinnamon: I love the warm flavor that cinnamon provides these cookies!

    Maple Syrup: Maple syrup is used in these cookies as a natural sweetener.

    Vanilla Extract: Vanilla adds delicious flavor and warmth to these gluten free breakfast cookies.

    Almond Butter: Almond butter acts as a binder in these cookies. It also adds a rich, nutty flavor.

    Bananas: Mashed bananas act as a binder, natural sweetener and also add moisture to these cookies!

    Mix-Ins: I used pumpkin seeds and chocolate chips as mix-ins. Feel free to get creative with this!

    Step By Step Instructions

    Step 1: Preheat oven to 350°F and gather your ingredients.

    Step 2: Combine all ingredients in a bowl.

    Step 3: Scoop cookies onto greased baking dish.

    Step 4: Gently flatten with a spoon.

    Step 5: Bake for 10-12 minutes. Enjoy!

    Storage

    Store these gluten free breakfast cookies in an airtight container in the refrigerator for 4-5 days. These cookies can also be frozen!

    Variations

    Base: I used oats for the base of these gluten free breakfast cookies. You could also try buckwheat or quinoa flakes!

    Nut Butter: I used almond butter in this recipe. Feel free to try out other types of nut butters. Pecan butter, peanut butter and walnut butter would all be delicious. You could also try chocolate hazelnut butter. If you need these cookies to be nut free, opt for sunflower butter.

    Sweetener: I used maple syrup in these cookies, but feel free to substitute honey or agave.

    Mix-Ins: I used chocolate chips and pumpkin seeds in this treat. The mix-in variations are endless. Try adding dried fruit, white chocolate chips, sunflower seeds, flax seeds, chia seeds, coconut flakes or nuts!

    Flavor: I used cinnamon and vanilla give these cookies a warm flavor. Experiment with spices and try adding ginger, cardamom or nutmeg.
