    Pasta: Use a pasta that holds up well for this chicken taco pasta. Feel free to use any shape you prefer! Some ideas are: rotini, mafalda, fusili or penne! I used Jovial pasta because I am gluten free!

    Beans: Beans are a great addition to chicken taco pasta. They add plant-based protein, fiber, and nutrients to the dish. Beans also help to make the dish more filling and satisfying. Feel free to use any type of beans you prefer. Some ideas are: black beans, kidney beans or pinto beans!

    Tomatoes: Canned tomatoes are a convenient and affordable way to add flavor and nutrition to chicken taco pasta. They are also a good source of vitamins and minerals, including vitamin C, potassium, and lycopene. Choose canned tomatoes that are whole, peeled, and diced. Avoid canned tomatoes that contain added salt, sugar, or preservatives.

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Cook pasta according to instructions on box.

    Step 3: While the pasta is cooking, chop the veggies, add onion to a pan and sauté over medium heat.

    Step 4: Add in garlic, peppers, corn, taco spices and salt and continue to cook. Stir in kidney beans and tomatoes.

    Step 5: Strain pasta and add into pan. Stir in the cooked chicken and enjoy!

    Storage

    Let the chicken taco pasta cool completely. Transfer the pasta to an airtight container. Refrigerate for up to 4 days. This is a great meal to prep for the week!
