December 21, 2023 by Lauren Leave a Comment

This dairy free rice pudding is a delicious and creamy alternative to traditional rice pudding. This vegan masterpiece takes all the nostalgia and comfort of the classic dessert and gives it a dairy free, plant-based makeover, ready to steal your heart (and your taste buds) in under 15 minutes. Imagine fluffy, tender rice grains combined with creamy coconut milk, maple syrup and warm cinnamon. Whether you crave a cozy hug on a chilly day or a refreshing escape from the summer heat, this dairy free rice pudding is the perfect answer, served hot or cold. We’ve ditched the dairy and refined sugars, but not the richness or flavor. It’s the perfect weeknight treat or last-minute dessert for unexpected guests.

    Origin of Rice Pudding

Pinpointing the exact origin of rice pudding is a bit of a culinary mystery, as similar dishes have been enjoyed throughout history and across various cultures. Nearly every culture has a similar dish, but we do know that it has roots in China and India.

    Why You’ll Love This Recipe

It’s creamy and dreamy, but does not contain any dairy!

This dairy free rice pudding is the perfect nostalgic treat.

It’s packed with warm, comforting flavors like cinnamon.

This recipe can be made in less than 15 minutes!

    It’s kid-friendly.

This dairy free rice pudding is easily customizable.

It can be served warm or cold!

    Equipment Needed

All you need to make this dairy free rice pudding is a ramekin or multiple ramekins if you are going to double or triple the recipe!

    Ingredients Needed

Rice: The key here is to use pre-cooked rice. This is a great way to use up leftover rice!

Coconut Milk: Coconut milk makes this dairy free rice pudding super creamy. You could substitute it for another milk, but it will not be as creamy.

Spices: I used cinnamon, allspice and ginger here to create a warm and cozy flavor!

Vanilla: I love the flavor that vanilla gives this rice pudding!

Sugar: I used coconut sugar here because it has a lower glycemic index and I love the flavor.

Salt: My favorite salt is Redmond’s Real Salt because it is high-quality and made with zero fillers. If you use my discount code LESSWITHLAUR you can get 15% off Redmond’s website.

    Step-By-Step Instructions

Step 1: Gather your ingredients. Preheat oven to 350°F.

Step 2: Combine wet ingredients in a ramekin and stir in dry.

Step 3: Bake for 5-7 minutes or until the top is browned. Add toppings of your choice! I used a gingerbread man, clove, cinnamon sticks and coconut flakes. Enjoy!

    Variations

This dairy free rice pudding is super versatile! Try out these different flavor combinations:

Try adding vanilla bean for extra vanilla flavor!

Add some raisins for a cinnamon raisin vibe.

Try using lemon zest and berries for a fresh, summery vibe.

Add in mango for a tropical mango coconut vibe!

Try adding apples for an apple cinnamon flavor.

Add some chocolate chips because they make everything better!

Make this dairy free rice pudding chocolate-flavored by adding some cacao powder.

Add some pumpkin spice for the perfect seasonal treat!

Stir in some protein powder to give this rice pudding some extra nutrients.

    Toppings

The topping options are also endless! I topped mine with a gingerbread man, cinnamon sticks, pecans, coconut flakes and star anise. Try out this option or experiment with other toppings!

Add some fresh fruit to your dairy free rice pudding.
