    Equipment Needed

All you need to make these gluten free mac and cheese bites is a bowl, pot mini muffin tin and spoon.

    Ingredients Needed

Mac and Cheese: I used gluten free and dairy free mac and cheese here because I am both gluten free and dairy free! Feel free to use any mac and cheese of your choice. You can also make your own mac and cheese.

Crackers: I used a box of Simple Mills crackers here. Feel free to use any crackers you love!

Butter or Oil: I used vegan butter in these gluten free mac and cheese bites. Feel free to use regular butter or coconut oil as well.

Binder: You can use eggs or flax eggs for the binder in this recipe!

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

Step 2: Prepare mac and cheese according to instructions on the box. Add 1 egg or flax egg and combine.

Step 3: In a separate bowl, combine cracker crumbs, butter and 2 eggs (or flax eggs).

Step 4: Pack this mixture tightly into a greased mini muffin tin. Add mac and cheese on top.

Step 5: Bake for 15 minutes and broil for 1 minute at the end! Pair with dipping sauces and enjoy!

    Storage

Feel free to store these bites for 4-5 days in an airtight container in the refrigerator.

    Variations

Mac and Cheese: Try out different kinds of mac and cheese or make your own!

Toppings: Top your gluten free mac and cheese bites with chives, hot sauce, extra cheese or bacon bits!

Spices: Add in extra spices to give these additional flavor. Try adding red pepper flakes or extra garlic.

    Dipping Sauces

I love pairing these gluten free mac and cheese bites with dipping sauces. I used ketchup and buffalo sauce here but feel free to use your favorite sauce! Some other ideas are: ranch, marinara, BBQ sauce or honey mustard.
