Ditch the gluten and heavy cream, while keeping the rich, creamy and thick textures you know and love. This soup is simply a healthier, lightened-up take on a classic that uses wholesome ingredients and leaves you feeling satisfied. Packed with vibrant veggies and juicy chicken, each spoonful is packed with flavor. The best part is that you can cook it all in just 1 pot for an easy weeknight dinner or meal prep.     All you need to make this healthy chicken pot pie soup is a cutting board, a knife and a pot.

    Ingredients Needed

    Chicken: I like to use high quality meat whenever I can! My favorite place to get my meat and fish is ButcherBox because they have organic and high-quality options and it gets delivered right to your door! 

    Chicken Broth: Chicken broth is the foundation of the soup's savory flavor! If you are looking to add more protein and nutrients, swap it out with bone broth.

    Potatoes: The potatoes help to make this soup creamy!

    Carrots: Carrots add some color and nutrients to this healthy chicken pot pie soup.

    Celery: Celery adds some color and crunch to this soup!

    Garlic: Garlic adds tons of flavor to this dish.

    Peas: Traditional chicken pot pies contain peas and this is a great way to honor the classic dish!

    Milk: I used almond milk here because I am dairy free. Feel free to use coconut milk or regular milk if you desire.

    Oil: I used olive oil to coat the pan before cooking!

    Step-By-Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Chop carrots, celery stalks, onion and garlic. Peel and chop potatoes. Cut chicken breast into cubes.

    Step 3: Add vegetables to an oiled instant pot. Add in dill, rosemary, salt and pepper and saute for 4-5 minutes, or until translucent.

    Step 4: Add in chicken breast and sauté for another 5 minutes.

    Step 5: Pour in chicken broth and pressure cook for 12 minutes.

    Step 6: Stir in milk. Pair with your favorite crackers, biscuits or bread and enjoy!

    Storage

    Store this healthy chicken pot pie soup in the refrigerator in an airtight container for 4-5 days or freeze it for up to 3 months.

    Slow Cooker Instructions

    Combine all ingredients in your slow cooker except the milk. Option to sauté the vegetables and chicken beforehand for better flavor. Cook on low for 6-8 hours, or on high for 4-5 hours, or until the chicken is cooked through and the potatoes are tender. Stir in milk!

    Stovetop Instructions

    Add vegetables to an oiled pot and cook over medium heat. Add in dill, rosemary, salt and pepper and sauté for 4-5 minutes, or until translucent. Add in chicken breast and sauté for another 5 minutes. Pour in chicken broth, bring to a simmer, cover and cook on low for 1 hour. Stir in milk!
