    You're going to love my quick and easy Sheet Pan Gnocchi Sausage recipe. This customizable, feel-good dish is super simple. Great for busy weeknights, the texture and flavor of this savory time saver is out-of-this-world and totally fantastic. Made with a handful of ingredients in less than 30 minutes in the oven, it's a no fuss and effortless recipe that gives me very few dishes to wash! I love that the gnocchi comes out pillowy inside and crispy on the outside. The sausage adds protein and the veggies make the whole dish super colorful.

    I love that this Sheet Pan Gnocchi Sausage recipe is gluten free AND dairy free.

    It's made with my favorite vegetables and is a flavorful way to get in loads of fiber. The veggies come out tender and delicious.

    Made in 30-40 minutes for a quick midweek meal.

    I love a one pan recipe for minimal mid week dishes - yes please!

    You can add in other ingredients like different roasted veggies for boosted nutritional value.

    This is a really great meal prep recipe. It will keep for a few days in the fridge and warms up quickly for an easy, reach-for lunch or dinner.

    It's really easy to make gluten free or dairy free.

    Sheet Pan Gnocchi Sausage

    Equipment Needed

    You will need a sheet pan, a cutting board and a knife. That's it! There's hardly anything to wash up!

    Ingredients Needed

    Sausages: A pack of your favorite brand of sausages.

    Gnocchi: Use your favorite brand of gnocchi for this Sheet Pan Gnocchi Sausage dish.

    Zucchini: Any color zucchini will do. Just choose fresh, firm and large zucchini for this Sheet Pan Gnocchi Sausage recipe.

    Aparagus: I love to make this recipe in the summertime when fresh green asparagus are at their best.

    Red pepper: Any color will do. I just really like the pop of red.

    Red onion: Adds some good savory flavor to the recipe.

    Dressing: You can use store bought or homemade. I used my luscious Green Goddess Dressing recipe.

    Salt: Seasoning is key.

    Garlic powder: I love adding this for a garlic flavor that is so convenient.

    Avocado oil: It has a neutral flavor, so it's perfect in this recipe.

    Step 1: Round up your ingredients for this Sheet Pan Gnocchi Sausage.

    Step 2: Prepare the vegetables and sausage by chopping them up. Transfer the ingredients to an oiled baking sheet.

    Step 3: Season the ingredients and bake them for 35-40 minutes at 350 F.

    Keep leftover Sheet Pan Gnocchi Sausage in an airtight container in the refrigerator for 3 days. I suggest cooling everything to room temperature before packing it away.

    I don't recommend freezing leftover Sheet Pan Gnocchi Sausage.

    Variations

    Make a slightly Italian version of this by adding in cherry tomatoes and using an Italian chicken sausage. Drizzle over some balsamic or Italian dressing at the end!

    When the weather starts to turn colder, mix in cubed sweet potatoes, Brussels sprouts and use apple sausage chicken. Season with rosemary and thyme.

    Turn this into a bowl recipe by combining the finished Sheet Pan Gnocchi Sausage ingredients with steamed broccoli, roasted sweet potatoes and some green beans.

    Simply space out all your ingredients and bake them until cooked through.

    Can I substitute a different type of meat? 

    Yes! Make a version with ground turkey, shrimp or ground beef.

    Do you have to boil gnocchi before baking it in this Sheet Pan Gnocchi Sausage recipe?

    Nope! It will cook perfectly in the oven.
