    Ingredients Needed to Make This Summer Sausage Stuffed Sweet Potato Recipe

    Sausage: I used my favorite Bilinski’s Chicken Sausage for this because it has amazing ingredients.

    Sweet Potatoes: I like to choose very large sweet potatoes for this!

    Vegetables: I used green peppers, red peppers and onions here. Feel free to mix up your veggies if you would like!

    How to Make This Summer Sausage Stuffed Sweet Potato Recipe

    Preheat to 425°F. Cook sweet potatoes 35-40 minutes or until soft. Scoop out most of the insides and add to a bowl. Combine with sausage, peppers and onions. Scoop mixture back into sweet potatoes and bake for another 20 minutes. Enjoy!

    Substitutions and Variations

    Feel free to use any type of sweet potato you prefer! I also love making these with Japanese sweet potatoes or purple sweet potatoes. Feel free to also mix up the veggies if you would like!
