Ingredients Needed
Gluten free bread: Any gluten free bread you like works. I usually use one with a relatively dense texture so it holds up in the oven. My favorite is Plantiful Kitchen and if you use code LESSWITHLAUR it gets you a discount. This one is totally worth the splurge for the holidays and you can freeze the rest for later if you don't use them right away. I used the Herbs de Provence flavor in this recipe!
Broth: Go for a rich and delicious broth. I love using chicken broth as it loads the gluten free stuffing with flavor but you can use vegetable broth too.
Sweet onion: This builds the aromatic base of the stuffing.
Celery: I love the rich, savory flavor from celery.
Thyme: I've used dried thyme in this gluten free stuffing recipe but you can also use fresh thyme. You might need a little extra as fresh thyme is milder than dried.
Garlic powder: I prefer to use powdered over fresh garlic as it doesn't burn!
Dash salt: Seasoning is key to this stuffing recipe. I used bread that was packed with herbs, so feel free to use extra herbs.
Rosemary: It's optional but I adore the cozy, wintery flavor it builds in.

Step By Step Instructions
Step 1: Preheat the oven to 375°F and round up all your ingredients.

Step 2: Chop the onion, celery and bread into pieces.


Step 3: Spread the bread in a baking dish and bake for 10 to 15 minutes, until it's lightly crisp.

Step 4: Stir in the chopped vegetables, spices and broth.

Step 5: Return to the oven and bake for an additional 25 to 30 minutes.

Step 6: Garnish your gluten free stuffing with rosemary, if you like, before serving.
Storage
Store any leftovers in an airtight container in the refrigerator for about 3 to 4 days. Reheat the gluten free stuffing in the oven until warmed through for best texture.
Variations
For a super festive version, I'll fold dried cranberries or chopped apples into my gluten free stuffing. SO good!
For extra crunch, adding in toasted pecans, walnuts or almonds at the end, works so well. If you love cheese, sprinkle over some dairy free or regular cheese, depending on your allergies.
I love adding in extra herbs like sage, parsley or oregano along with the thyme.
Stirring in a pinch of crushed red pepper flakes adds a little kick.
To make it more filling, I'll add in cooked sausage, chickpeas or sautéed mushrooms.
How To Serve
- Pop the gluten free stuffing in the center of your holiday table with all your other favorites.
- Sometimes I'll take it to a friend's house and just cook it in their oven!
- Use it to stuff bell peppers, squash or even baked mushrooms.
- It's yummy as an appetizer. I just spoon it into small ramekins and bake it in individual portions.
