This gluten-free French onion green bean casserole takes the boring side dish to a whole new level. I'm going to be so honest, I was never a fan of green bean casserole and I am a huge mushroom hater. So I made a version that is bursting with French onion flavor, topped with crispy fried onions and uses simple ingredients. Dare I say this side has the potential to be the star of your Thanksgiving meal? This dish is gluten-free, dairy-free optional, doesn't use any canned soup and is super easy to make. I am genuinely excited to make this gluten-free green bean casserole for Thanksgiving this year. (Something I never thought I would say)!

    green bean casserole ingredients
    • Green beans: I love using fresh green beans in this recipe! You can also used canned.
    • Onions: Sweet onion is my favorite.
    • Garlic: Gives this recipe tons of flavor.
    • Broth: Homemade or store bought both work just fine!
    • Milk: I used coconut milk in this recipe because I'm dairy-free.
    • Arrowroot powder: Used to thicken up the sauce.
    • Coconut aminos: I used coconut aminos to give the sauce an umami flavor.

    Recipe Variations

    • Green beans: Feel free to use fresh, frozen or canned green beans.
    • Add meat: Try adding bacon to this dish for some protein and crunch.
    • Add mushrooms: If you love mushrooms, feel free to add them.
    • Make it dairy-free: Use coconut milk to keep this recipe dairy-free.
    • Low histamine: To make this recipe lower histamine, use fresh green beans, homemade broth and skip the coconut aminos, or use a brand that is lower in histamine like Bragg's.

Step 4: Place green beans into a 9x5 dish and pour in soup mixture. Bake for 35-40 minutes. Top with crispy onions (optional) and enjoy!

    Recipe Tips

    • Make your own crispy onions by chopping half of an onion into half moons. Dip in coconut milk and then a mixture of 1/8 cup almond flour and 1/8 cup arrowroot powder and fry in a pan until browned.
    • Use fresh green beans if possible!
    • Let the dish rest for a few minutes after baking so the sauce thickens up.

    Storage and Make Ahead Tips

Store in an airtight container in the fridge for 3-4 days. Reheat in a 350°F oven until warmed through. The oven helps the topping crisp back up. The microwave works for single servings, but the onions will soften.

Put the whole casserole together without the crispy onion topping up to 1 day ahead. Cover it and keep it in the fridge. Let it sit at room temperature for about 20 to 30 minutes before baking, and add a few extra minutes to the bake time since it's starting cold.
