Vegetables: I like to use carrots, celery, onion, garlic and corn in my soup. Sometimes I will add potatoes also! Feel free to use any vegetables you would like here! Different vegetables can add texture and flavor to the soup.
Chicken Broth: It is my preference to use bone broth here, but since I am still eating low histamine I use chicken stock or homemade chicken or vegetable broth. If I am using a packaged broth, I will look for no added sugar or natural flavors.

How to Make Gluten Free Chicken Noodle Soup
Fill a large pot with broth. Bring to a boil, add chicken breasts, cover and cook for a few minutes. While the chicken is cooking, chop your vegetables and then add them to the pot. Add dill and salt. Turn down heat to med, simmer and cover. Cook for 1 hour. Cook pasta according to directions on package. Add pasta to soup when serving.

If you have leftovers, store the soup separately from the noodles so that the gluten-free noodles don’t get soggy. You can store this soup for 4-5 days in an airtight container in the refrigerator or freeze it.
