Equipment Needed
All you need to make this recipe is a mixing bowl, spoon, measuring cups and spoons and a baking sheet.
Ingredients Needed
Flour: I used Bob’s Red Mill Paleo flour here. It is my favorite gluten free flour to bake with! These cookies are nut free if you make them with a 1:1 gluten free flour that does not contain nuts.
Sugar: I used cane sugar in this edible gluten free cookie dough. I usually use coconut sugar but it is too dark to use if you want your batter to be the pretty green color!
Butter: I used vegan butter here because I am dairy free.
Milk: I used dairy free milk here because I am dairy free.
Vanilla: Vanilla extract always gives desserts a warm and comforting flavor!
Salt: My favorite salt is Redmond’s Real Salt because it is high-quality and made with zero fillers. If you use my discount code LESSWITHLAUR you can get 15% off Redmond’s website.
Peppermint: I love the flavor that peppermint extract adds into this recipe!
Mini Chocolate Chips: I used Enjoy Life Foods chocolate chips here because they are allergy-friendly. They make amazing mini chips!
Matcha: I try to use high-quality matcha whenever I can. I used Pique Matcha here because it is organic, ceremonial grade and tested for toxins.

Variations
These mint matcha chocolate chip cookies can be customized in so many ways!
Mint: Feel free to omit the mint if you prefer, but I love the flavor it adds.

Fruit: Add freeze dried fruit into these cookies like blueberries or strawberries!
Warmth: Warm up these cookies by adding in ginger or cinnamon.
Crunch: Add in some crunch by putting some chopped nuts into the batter.
Recipe FAQs
Is matcha healthy?
Matcha is particularly high in catechins, especially epigallocatechin gallate (EGCG), which may help protect cells from damage and potentially reduce the risk of chronic diseases. The benefits are most pronounced in high-quality matcha.
How much matcha do you put in cookies?
I used 1 tbsp matcha in these cookies!
If I don’t like matcha will I like these cookies?
If you don’t like the taste of matcha, you probably will not like these cookies.
What does matcha taste like?
High-quality matcha has a natural sweetness, but it’s subtle and not overpowering. There’s a slight bitterness present, but it’s pleasant and not harsh.
Is matcha and chocolate a good combination?
Yes, it is a delicious combination!
Why is matcha so expensive?
Matcha thrives in specific environments. Ideal locations have fertile soil, mild climates and slight elevation – factors that limit the overall area suitable for high-quality matcha production. High-quality matcha requires careful handling and storage to preserve its freshness and flavor. This can add to the overall cost. Matcha’s popularity has grown significantly in recent years. With limited production and high demand, the price can remain high.
What kind of matcha should I get for baking?
I like to use ceremonial grade matcha because it is the highest quality matcha, known for its smooth taste and vibrant green color. You can also use culinary grade matcha.
