    These viral Protein Frozen S'mores are the perfect no-bake and easy summer dessert. They are such a fun twist on the classic s'mores recipe and there is no bonfire needed! Think layers of fluffy, whipped cream, gooey chocolate and comforting graham crackers. They're so easy to make and the ice cream sandwich style adds a fun, nostalgic touch that's perfect for summertime BBQs and pool days. Plus, these freezer-friendly little treats are gluten free, nut free, dairy free and vegan! Nothing beats a refreshing, chilled campfire treat with a creative twist. Right?!     Why You'll Love This Recipe

    You don't need any fancy equipment to make these. They take minimal effort and you won't even need to switch on your oven.

    I love that I can make them ahead, with only 5 ingredients and they're waiting for me in the freezer. Ready to go!

    These Protein Frozen S'mores are allergy friendly, gluten and dairy free. They are super adaptable!

    You can totally customize these. Mix and match the layers and ingredients.

    Guys, these are kid-friendly for sure. Your little ones will LOVE these!

    I added protein powder to help with the blood sugar impacts of this treat!

    These treats are creamy, cool and chocolatey - ideal for warm summer days or evenings.

    Equipment Needed

    Protein Frozen S'mores are pretty low-mess. You'll need a baking pan, a bowl and 3 spoons.

    Ingredients Needed

    Gluten free graham crackers: Be sure to buy graham crackers that work for all of your dietary needs and allergies.

    Dairy free mini chocolate chips: I love Enjoy Life or Hu Kitchen brands!

    Vanilla protein powder: Use your favorite brand. I used a gluten free and dairy free vanilla protein powder in this recipe!

    Coconut whipped cream: Ah, it has the most luscious texture. My favorite brand is So Delicious!

    Sunflower seed butter: I love the flavor and consistency of silky sunflower seed butter. It also keeps this recipe nut free.

    Step By Step Instructions

    Step 1. Round up your ingredients.

    Step 2. Start by adding a layer of graham crackers to the base of your baking dish.

    Step 3. Prepare the chocolate by melting the chocolate chips. Drizzle the chocolate over the crackers in an even layer.

    Step 4. Gently mix together the protein powder and whipped cream. Spread this over the chocolate layer.

    Step 5. Drizzle the sunflower seed butter over next.

    Step 6. Add a final layer of Graham crackers and place the baking dish into the freezer. Freeze for long enough for the Protein Frozen S'mores to harden completely. Slice and serve!

    Storage

    You can keep your Protein Frozen S'mores in a sealed container or a freezer friendly bag in the freezer for about 3 months.

    I like to layer parchment paper between the squares to keep them from sticking together and breaking. 

    To thaw them out, remove them from the freezer for a few minutes before you're ready to enjoy them.

    Variations

    Try adding a layer of sliced fresh strawberries or raspberries on top of the whipped cream and protein powder layer. You could also fold some of my Blueberry Chia Jam through the cream.

    For a rich, extra sweet version of these Protein Frozen S'mores, drizzle them with a caramel sauce (I use a dairy free sauce) and top them with crushed gluten free pretzels or cookies.

    Another fun version is to use marshmallow fluff instead of the whipped cream. For some campfire side vibes.

    Make a holiday version in December by adding crushed peppermint and red and white sprinkles. I love taking these along to a Christmas party!

    If you can tolerate nuts, almond or cashew butter is a yummy alternative to sunflower seed butter.

    Try making a crunchy base with crushed gluten free graham crackers. You can mix them with a small amount of room-temperature coconut oil to create a firm base layer.

    How To Serve 

    I like to serve my Protein Frozen S'mores as an easy, out-the-freezer treat:

    • As an after-dinner or afternoon sweet treat (you know I have a sweet tooth!)
    • With a tablespoon of fresh berries - like diced strawberries or some blueberries and raspberries.
    • With my Bone Broth Hot Chocolate for an extra boost of goodness.

    Can I make these ahead of time?

    Yup, definitely. I make my Protein Frozen S'mores up to 2 weeks ahead. They keep well as long as you follow the storage instructions.

    What other fillings work well in these?

    Thin slices of fresh strawberries layered in are delicious. Swirl in some caramel, sliced banana or even some toasted nuts.

    Can I swap the sunflower butter for another nut butter?

    Yes! I sometimes make this with almond butter, peanut butter or cashew butter. All are delicious in this recipe.

    Are these gluten free?

    Yes, as long as you use certified gluten free graham crackers, this recipe is completely gluten free. You should double check the ingredients in your protein powder and chocolate too.

    Are these dairy free?

    Yes! These Protein Frozen S'mores are 100% dairy free so long as you use coconut whipped cream, dairy free chocolate chips and a dairy free protein powder as well.

    What other protein powder flavors would work here?

    Ok so, I've tried a few other flavors and I find that, aside from vanila, chocolate is also really yum. Peanut butter is a good one to try if you aren't nut intolerant or allergic. A silky, creamy protein powder that isn't chalky is what I look for.

    • Melt chocolate chips.
    • Drizzle over layer of graham crackers.
    • Combine whipped cream and protein powder and spread over chocolate layer. Drizzle on sunflower seed butter.
    • Add graham crackers on top. Freeze until hardened. Slice into squares and enjoy!

    Additions: try adding strawberries or another fruit, caramel, sprinkles
    Make sure your graham crackers are aligned so that when you cut them they will be sandwiches!
