    Pumpkin: The best type of pumpkin to use for pumpkin fries is a sugar pumpkin. Sugar pumpkins are smaller and sweeter than carving pumpkins, making them ideal for cooking and baking. They have a thick, orange flesh that holds up well when cooked.

    Oil: I used avocado oil to make these pumpkin fries because it has a high smoke point.

    Cut the pumpkin in half and scoop out the seeds and stringy parts. Cut into strips and peel the pumpkin. Aim for a thickness similar to regular French fries.
