    Low Histamine Ice Cream (Golden Milk)

    My Low Histamine Ice Cream is a delicious and light sweet treat! It's a super creamy, low histamine dessert that you can have whether you're managing mast cell issues, navigating food intolerances or just craving a smooth, frozen and decadent dessert on a hot summer day. I love that I can make it with minimal ingredients like coconut milk, mild spices and my favorite plant-based milk. It's vegan, gluten free and dairy free ice cream that is super easy to make. It's also fresh, homemade and bursting with flavor. It's my kind of sweet summer treat that I want to scoop up all year round.

    What is a Low Histamine Diet?

    A low histamine diet involves reducing the amount of histamine you consume through food and avoiding foods that trigger your body to release more histamine. Histamine is a chemical involved in immune responses and it's also found in many foods. Here's my full article about the Low Histamine Diet.

    It is especially high in aged, fermented or leftover ones (which really sucks!!). For people who don't break it down well, histamine can build up and lead to inflammation, allergic like reactions and chronic symptoms.

    It's perfect for if you're trying to avoid dairy or looking for a vegan-friendly dessert.

    You can easily switch up the base or spices to suit what you like or what you have in your cupboard.

    Equipment Needed

    I used my Ninja Creami and a whisk to make this easy Low Histamine Ice Cream.

    Ingredients Needed

    Almond milk: Use a good quality almond milk, homemade or store bought. You can aslo make this recipe other types of milk. Try it with regular milk (if you drink dairy) or another nut milk.

    Coconut milk: I absolutely love the flavor from rich coconut milk and it goes really well with the turmeric and cardamon.

    Ginger: Ground ginger adds loads of flavor to this recipe. I wouldn't leave it out!

    Turmeric: With it's anti inflammatory properties, this spice adds the golden color to the ice cream.

    Cardamom: I love the flavor of cardamon with coconut milk and ginger.

    Vanilla: If you can tolerate it, add a non-alcoholic vanilla extract for a that desserty flavor.

    Protein powder: This is totally optional but why not boost your Low Histamine Ice Cream with some added protein?

    Coconut sugar: This natural sweetener adds just the right amount of sweetness in this Low Histamine Ice Cream.

    Step By Step Instructions

    Step 1: Round up your Low Histamine Ice Cream ingredients.

    Step 2: Add the ingredients into your Ninja Creami cup and blend with a whisk.

    Step 3: Freeze the golden milk ice cream overnight or until it hardens up.

    Step 4: Process it on ice cream mode and then respin.

    Step 5: Scoop your ice cream into a bowl and add your favorite toppings.

    I store my Low Histamine Ice Cream in my Ninja Creami container with the lid tightly sealed to prevent ice crystals from forming. I find I can freeze for up to 1 week and retain good flavor and texture.

    If the ice cream gets a little too hard, use the re-spin setting or soften function before scooping it into a bowl. I try to avoid thawing and refreezing, as this may increase histamine levels and change the texture.

    Variations

    Here are a couple of ways I play around with this base recipe for Low Histamine Ice Cream:

    Blueberry: Blend some fresh or frozen blueberries with the almond and coconut milk before continuing with the recipe steps.

    Carob: Combine chocolatey tasting carob and tahini with almond milk and vanilla for a rich, low histamine dessert.

    Pear: You guys, pear is SO good with these flavors. You can steam a little fresh, peeled pear until soft and then blend it into the milks.

    Apple: Just like the pear, steam it until soft and then blend it in with the milks before making the Low Histamine Ice Cream.

    How To Serve 

    Here are the ways I love to serve this silky Low Histamine Ice Cream recipe:

    • In a chilled ice cream bowl or glass with a gluten free cone.
    • Scooped up into the cone for an on the go ice cream.
    • Blended with more chilled almond or coconut milk for a milkshake.

    Low-histamine desserts generally include pretty simple, whole food ingredients like coconut milk, fresh or steamed low-histamine fruits. These fruits include blueberries, apples and pears. Other ingredients include maple syrup or coconut sugar and grain-free flours.

    Can you make this recipe if you don't have a Ninja Creami? 

    Yes! You can blend the ingredients in a regular blender, pour into a shallow dish, freeze until solid, then let it sit at room temperature for 10 to 15 minutes before scooping. For a creamier texture, blend again after partially thawing.

    Yes, this recipe is completely dairy-free. I've designed it using almond and coconut milk as the base, so it's suitable for those of us who can't have dairy!
