    Instant Pot Sausage White Bean and Kale Soup

    This Sausage White Bean and Kale Soup is so cozy, nourishing and satisfying! It's perfect for soup season and makes a delicious lunch or dinner. I love meal prepping and freezing it too, so that I always have soup on hand! This soup has the best flavor and textures and I love that it has protein from the sausage and fiber from the white beans. I also love making this soup in the Instant Pot because it is so quick and easy! This soup is gluten free, dairy free and allergy-friendly also! It's made with simple and wholesome ingredients and your whole family will love it. I am actually about to heat up a bowl of it as I type this!

    Equipment Needed

    All you need to make this Sausage White Bean Kale Soup is a cutting board, knife and an Instant Pot. If you don't have an Instant Pot, you can also make it in a pot on the stovetop.

    Ingredients Needed

    Sausage: I love using Bilinski's sausage because it has amazing ingredients. I used the spicy sausage here, but feel free to opt for a different flavor.

    Vegetables: I used celery, carrots, onion, garlic, beans and kale in this recipe! I love packing my soups with lots of vegetables.

    Broth: I love the chicken stock from Pacific. It is organic and uses great ingredients.

    Spices: I used salt, thyme and rosemary in this soup!

    Step By Step Instructions

    Step 1: Gather your ingredients.

    Step 2: Chop your vegetables and sausages.

    Step 3: Put your Instant Pot on saute mode and brown the sausages.

    Step 4: Add in vegetables, spices, beans and broth.

    Step 5: Cook on pressure cook for 20 minutes. Serve and enjoy!

    Storage

    This Sausage White Bean and Kale Soup can be stored in an airtight container in the refrigerator for 3-4 days.

    It can also be stored in the freezer. I love storing my soup in these Souper Cubes!

    Variations

    Here are some ways to switch up this soup:

    • Protein: Try adding chicken instead of sausage. You can also use crumbled sausage or add bacon.
    • Creamy: Stir in coconut milk before serving!
    • Veggies: Add additional veggies like potatoes, zucchini or tomatoes.
    • Spice: Add in red pepper flakes or chili paste.
    • Greens: Swap the kale for spinach or chard.
    • Pasta: Add in gluten free pasta!
