    Sweet Potato Shepherd’s Pie

    If you’re craving a cozy and comforting dinner that’s nutrient-dense and satisfying, this Sweet Potato Shepherd’s Pie is going to be your new go-to meal! This dish is using wholesome ingredients and it’s so easy to make! This dinner is perfect for any night of the week and also makes great leftovers for lunch the next day! Packed with veggies and protein, this gluten-free and easily adaptable dish is a family-friendly favorite that’s great for meal prep and freezer-friendly for busy weeknights.

    What Is Shepherd’s Pie?

    Shepherd’s pie is a classic British dish that’s a comforting and hearty meal. Essentially, shepherd’s pie is a casserole with a meaty filling and a potato crust. It’s a simple yet satisfying dish that’s perfect for a cozy dinner at home. This dish is typically made with ground lamb, but ground beef is also very common and what I used in my recipe!

    Equipment Needed

    All you need to make this Sweet Potato Shepherd’s Pie is a pan, cutting board, knife, pot and a mixer or a bowl and fork to mash the potatoes.

    Ingredients Needed

    Oil: I used avocado oil to oil the pan. I also added some to the mashed sweet potatoes.

    Ground Beef: I used ground beef in this recipe! You can use any type of ground meat you have on hand though.

    Vegetables: I used frozen vegetables to make this recipe super quick! The mixture I purchased had peas and carrots.

    Onion: I love adding sweet onion to shepherd’s pie. It gives it a great flavor.

    Garlic: In shepherd’s pie, garlic plays a crucial role in enhancing the flavor of the meat and vegetable filling

    Chicken Broth: I used chicken broth in this recipe, but feel free to use any other broth you love. Broth adds flavor and keeps the filling moist in this recipe.

    Sweet Potatoes: I topped my shepherd’s pie with sweet potatoes! I love sweet potatoes in this dish because it adds a sweet flavor to this savory dish.

    Step By Step Instructions

    Step 1: Gather your ingredients. 

    Step 2: Chop onion, potatoes and garlic.

    Step 3: Brown ground beef in cast iron skillet over medium heat. 

    Step 4: Add in garlic, vegetables, coconut aminos and broth and cook until lightly browned.

    Step 5: While the beef and vegetables are cooking, boil water for potatoes.

    Step 6: Add potatoes to water and boil until soft. 

    Step 7: Strain potatoes and mix with oil, using a mixer or by hand. 

    Step 8: Spread potatoes over beef mixture and bake in the oven at 375°F for 20-30 minutes. Serve and enjoy!

    Storage

    Store this sweet potato shepherd’s pie in an airtight container for 4-5 days in the refrigerator. This meal can also be frozen and reheated later!

    Shepherd’s pie is a hearty meal that can be enjoyed on its own, but feel free to serve it with a side dish as well! Pair this meal with a green salad, bread or peas.

    Here are some more tips for serving:

    Serve hot: Shepherd’s pie is best enjoyed hot and fresh from the oven.

    Garnish generously: Sprinkle with fresh herbs like parsley or chives for added flavor and visual appeal.

    Leftovers: Shepherd’s pie reheats well. Simply reheat individual portions in the microwave or oven.

    Meat: I used ground beef in this recipe but you can also use ground turkey or ground lamb.

    Vegetables: I used carrots, onions and peas for this dish. Feel free to add in additional vegetables like corn, mushrooms, broccoli and spinach!

    Sauce: I used coconut aminos because I am allergic to soy, but you can also use soy sauce.

    Broth: I used chicken stock in this recipe, but feel free to use bone broth, chicken broth or beef broth!

      So so good!! We had Tamari in the pantry and used that, also added chopped mushrooms to the mix.

      The recipe had onions in it, but not the shopping list so I missed that, however, I’d personally prefer it without the onions. Took about 1.5hrs due to the potatoes boiling.
