    Thai Coconut Lime Chicken

This dish brings together the creamy goodness of coconut milk and the zesty punch of lime zest, resulting in a tangy marinade that pairs perfectly with the chicken. And that's not all - imagine enjoying this chicken alongside sweet mango, aromatic herbs, and fluffy rice that's cooked to perfection. It's a flavor combination that you definitely do not want to miss out on! This dish is also naturally gluten free and dairy free and can be made in one pan! It is one of my favorite comfort food recipes and I know this will be a new addition to your dinner rotation.

    Equipment Needed

    All you need to make this delicious Thai Coconut Lime Chicken is a cutting board and a pan.

    Ingredients Needed

    Chicken Breasts: I try to purchase high-quality meat whenever I can. My favorite place to get my meat is ButcherBox because they have organic and high-quality options and it gets delivered right to your door!

    Sweet Onion: I love using sweet onion in this recipe because it adds a delicious flavor to this meal.

    Garlic: This gives the chicken a delicious and garlicky taste.

    Ginger: The fresh ginger gives this recipe a warm and fiery kick!

    Coconut Milk: I love the creaminess that coconut milk adds to this recipe!

    Chicken Broth: This adds extra flavor and depth to the dish.

    Coconut Aminos: I love adding in coconut aminos for extra sweetness! Feel free to substitute for soy sauce as well.

    Lime: The fresh lime gives this recipe a zesty flavor!

    How to Make Thai Coconut Lime Chicken

    Step 1: Begin by searing chicken in a pan. To do this, place the chicken breasts in an oiled pan over medium-high heat. Cook 5 minutes per side or until lightly browned.

    Step 2: While the chicken is cooking, chop the onion, garlic and ginger.

    Step 3: Remove chicken from the pan and place aside. Cook the onion, garlic and ginger until lightly browned.

    Step 4: Add the chicken back into the pan. Pour coconut milk, coconut aminos, chicken broth, lime juice and salt into the pan.

    Step 5: Cook on medium heat for 15 minutes or until chicken is cooked all the way through.

    Step 6: Serve with white rice, mango, parsley and red chiles to garnish! Enjoy!

    Storage

    You can store this recipe in the refrigerator for 4-5 days.

    Reheating

    Feel free to reheat this meal in the microwave or in a pan on the stove.

    Yes! I would recommend adding in extra vegetables before you add the chicken back into the pan. I have made this recipe with baby bok choy and snap peas before and it is a great way to add extra nutrients!
