    These Waffle Sandwiches are such a fun breakfast option! Fluffy waffles meet melty eggs and bacon, for a golden, perfect sandwich that's as fun to eat as it is to make! These are so flavorful and a great way to switch up your breakfast. They're simple to make, quick to assemble and better for you than fast food. They are seriously the perfect combination: golden waffles, crispy bacon, creamy avocado, spicy sriracha and fresh microgreens. Loaded with crunch and savory deliciousness. I like to serve this as a Sunday brunch or lunch as well! These sandwiches are a perfect breakfast bite that kids and adults will both love.

    What Is A Waffle Sandwich?

    A waffle sandwich is exactly what it sounds like: a delicious all day meal made by stacking breakfast ingredients (or your favorite brunch ingredients) between two crispy waffles.

    My version includes avocado, eggs, bacon, spicy sriracha and fresh microgreens, for a savory, creamy and crunchy combination!

    Equipment Needed

    For my waffle sandwiches, I used toasted my waffles in an oven but you can also cook them in a toaster.

    You'll also need a frying pan or skillet for the bacon and eggs, as well as a cutting board.

    Ingredients Needed

    Waffles: Choose your favorite store bought or homemade waffles. Golden, fluffy waffles work best. They make the perfect base for stacking eggs, bacon and avocado. Frozen waffles are totally fine, too. Just make sure you toast them according to package instructions so you get the best texture.

    Bacon: Use thick-cut bacon if you like it extra crispy or regular slices if you prefer. You can also swap for turkey bacon!

    Eggs: Cook them sunny side up, over-easy or scrambled depending on what you love!

    Sriracha: You can also use another hot sauce like hot honey or chili garlic sauce.

    Avocado: Creamy avocado spreads perfectly on the waffles. You want to choose ripe avocados so they're buttery and spreadable.

    Microgreens: Totally optional but they add a little fiber and pretty color!

    Step By Step Instructions

    Step 1: Grab your ingredients and set them out.

    Step 2: Toast your waffles according to the package instructions. Set them aside.

    Step 3: Cook your eggs bacon and eggs and set them aside.

    Step 4: Spread the avocado on 2 of the waffles.

    Step 5: To finish, add egg, bacon, sriracha and microgreens on top and place plain waffles on top to make 2 sandwiches. 

    Storage

    Store leftovers in an airtight container in the fridge for up to 2 days. For longer storage, these sandwiches can be frozen. Just wrap individually and reheat in the toaster or oven for a quick meal.

    Variations

    Use another protein. Try swapping bacon for sausage or ham.

    Make it gooey by adding some cheese!

    Try different greens like arugula or spinach.

    Drizzle honey or maple syrup for a sweet and savory flavor.
