Beet: I use pre-cooked, chopped beets that are either roasted or pre-boiled for a shortcut. You can also roast your own beets though.
Olive oil: Use the best quality EVOO in this Beet Without Tahini recipe.
Garlic: Personally I like to use fresh garlic in my hummus! I think it tastes way better than garlic powder.
Lemon juice: This is optional but balances the recipe out and is really yummy. If you want to make a low histamine version, skip the lemon.

Yes, they will change the pink color to yellowy/orange but still be delicious. There is a also a slight difference in taste but both are super yummy.

Can I use boiled beets?
Yes, just make sure the beets are cool before adding them to the food processor.
Can I substitute almonds for chickpeas?
Personally I haven't tried this but I would recommend soaking almonds first.
