    I love a simple Herby Chicken recipe that works for meal prep and also shines as the perfect weeknight dinner. Think chicken thighs smothered in a simple yet unique mix of fresh herbs, bringing together aromatic, lemony, garlicky flavors that are deliciously bright and zesty. Whether you love your chicken roasted in the oven or grilled outdoors until crispy on the edges, the result is always unbeatable juiciness. I love the way this recipe pairs well with loads of my favorite veggies and salad side dishes.

    I used a baking dish, a cutting board and a knife to make this herby chicken recipe.

    Ingredients Needed

    Chicken: I used chicken thighs for this herby chicken dish. I love how juicy they turn out.

    Herbs: Use a mix of fresh herbs like dill, parsley and chives.

    Olive oil: Go for a good-quality olive oil for this recipe. The flavor of the oil shines through as it's such a simple recipe.

    Garlic powder: Savory and a delicious add-in. You could also try onion powder.

    Step By Step Instructions

    Step 1: Preheat your oven to 375°F and gather your ingredients together.

    Step: Chop your herbs nice and fine.

    Step 3: Add your chicken thighs to a baking dish and top them with olive oil and herbs.

    Step 4: Bake the herby chicken for 30 to 40 minutes, or until the chicken reaches an internal temperature of 165°F.

    Storage

    Once your herby chicken has cooled completely, it can then be stored in an airtight container for about 3 days.

    You can also freeze leftovers for about 2 months. Just make sure they are packed in an airtight container in the refrigerator.

    Variations

    More Mediterranean: You can swap the dill for fresh oregano and squeeze lemon juice over the chicken just before baking it.

    Creamy herby chicken: After baking, stir 1/4 cup Greek yogurt or sour cream into the pan and mix it up with the pan juices.

    If you like spice, mix 1/2 tsp chili flakes with 1 tsp paprika and add it to the herb mixture.

    Place the chicken on a sheet pan with potato wedges, zucchini or carrots tossed in olive oil and salt.

    Here's how I love to serve my herby chicken:

    Definitely. Heat olive oil in a skillet, add the seasoned chicken thighs, and cook over medium heat for about 6 to 7 minutes per side until golden brown and fully cooked.

    How do you know when chicken thighs are cooked through? 

    I use a meat thermometer. Once the temperature measures 165F internally and the juices run clear when the thigh is pierced; I am happy the chicken is cooked through.
