Mixed greens: Just your favorite batch of fresh greens will do. A mix of baby spinach and salad greens is great.
Peaches: I love making this Summer Peach Salad when peaches are at their best. Ripe and juicy is best, but not overripe.
Pistachios: Green pistachios add a delicious flavor and texture to the Summer Peach Salad.
Red onion: I love the mild flavor and pretty color in red onion.
Avocado: Use a perfectly creamy and ripe avocado.
Feta: The sharp saltiness of feta cheese is delicious with the sweet peaches. You can use a vegan cheese if you need to.
