Ingredients Needed
Flour: I use 1:1 gluten free flour to make these Gluten Free Christmas Sugar Cookies. I love using Bob's Red Mill Paleo Flour.
Baking powder and baking soda: Use fresh batches to give your cookies a little lightness and lift.
Sugar: I love baking with coconut sugar, but regular white sugar is great, too. If you want the cookies to be lighter, using regular sugar is the way to go for these.
Salt: Adding some salt just balances the flavors and makes them super delicious.
Coconut oil: Melted coconut oil is perfect in this sugar cookie dough.
Olive oil: Use a good quality olive oil so the flavor is good.
Applesauce: Bakes perfectly moist and tender cookies.
Vanilla extract: I never skip adding dreamy vanilla.
Egg: Use room temperature eggs if you can for easy baking.
Vanilla frosting: To frost the cookies with.
Sprinkles: Check that your brand is gluten free!

Step By Step Instructions
Step 1: Start by gathering all your ingredients and preheating the oven to 350°F.

Step 2: In a large bowl, mix together the dry ingredients. Then, fold in the wet ingredients until fully combined.

Step 3: Chill the dough in the fridge for 15 to 20 minutes to make it easier to handle.

Step 4: Scoop out dough into 1½ to 2 inch balls and place them on a greased, parchment lined baking sheet. Lightly press each ball with the back of a spoon, then bake for 15 to 17 minutes or until the edges turn a light golden brown.

Step 5: Let the cookies cool completely before decorating. Spread frosting gently over the cookies and top with sprinkles. Serve and enjoy!

Storage
Store the frosted cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
You can also make the cookie dough and chill it for about 3 days before baking.
You can also freeze unfrosted cookies for up to 3 months and frost them after thawing.
Variations
Sometimes I'll fold in my favorite chocolate chips or chunks for a chocolate version. You can also add sprinkles to the better!
Adding cinnamon, nutmeg or ginger gives these Gluten Free Christmas Sugar Cookies a more holiday feel.
Mix in chopped nuts like pecans, walnuts or almonds.
Stir in lemon or orange zest for a bright, refreshing flavor.
They're also really yummy with dried cranberries, cherries or blueberries mixed in.
I like to swap vanilla frosting for chocolate or swirl two colors together.
